Methi Dal Dhokli

Methi Dal Dhokli is a delicious treat from the Gujarati cuisine.



Ingredients:

 For Dal 
• ½ cup Toovar Dal (arhar) 
• ¼ tsp Mustard Seeds 
• ¼ tsp Cumin Seeds (jeera) 
• ¼ tsp Fenugreek Seeds (methi) 
• 10 Curry Leaves (kadipatta) 
• 2 Cloves (laung/ lavang) 
• 2 sticks Cinnamon (dalchini) 
• 1 Bay Leaf (tejpatta) 
• 2 small Red Chilies 
• ¼ tsp Asafoetida (hing) 
• 4 pieces Cocum (soaked) 
• ¼ cup Chopped Tomatoes 
• ½ tsp Turmeric Powder (haldi) 
• ½ Lemon Juice 
• 4 Green Chilies (slit) 
• ½ tsp Chili Powder 
• 1 tsp Ginger (grated) 
• 1 tsp Ghee 
• ½ tsp Jaggery 
• Salt to taste

For Dhoklis 
• 1 cup Whole Wheat Flour 
• 3/4 tsp Fenugreek Leaves (methi) (chopped) 
• ½ tsp Turmeric Powder (haldi) 
• ½ tsp Chili Powder 
• ¼ tsp Asafoetida (hing) 
• 1 tsp Oil 
• Salt (to taste) 
• ¼ cup Chopped Coriander Leaves (to garnish)

Method:

For Dal

  1. Wash the toovar dal and soak it in water for 15 minutes.
  2. Thereafter, cook it in the pressure cooker, till it whistles thrice. Keep it aside and allow it to cool.
  3. When it is slightly cool, whisk dal until it gets smooth.
  4. Take a pan and heat ghee in it. Add mustard seeds, cumin seeds, fenugreek seeds, curry leaves, cloves, cinnamon sticks, bay leaf, red chilies and asafoetida in it and saute, till the mixture starts emitting fragrance.
  5. Now, add cooked dal to the above mixture, along with 3 cups of water, cocum, tomatoes, turmeric powder, lemon juice, salt, green chilies, chili powder, ginger and jaggery and cook it on simmer flame for 10 minutes. 

For Dhoklis

  1. Mix all the ingredients required for preparing dhoklis and knead to form firm dough.
  2. Now, divide this dough into six equal pieces and roll out into thin chapattis.
  3. Put a non stick tawa over the flame and roast the chapattis on it, from both the sides. Keep them aside. 

To Serve

  1. Before serving, boil the dal, put dhoklis in it and turn the flame on simmer.
  2. Stir it every 2- 3 minutes.
  3. Remove from the flame and garnish with coriander leaves.
  4. Serve hot.

Spinach & Tomato Rice

Spinach & Tomato Rice is a Greek dinner recipe.


Ingredients:

• 2 Pounds fresh spinach 
• 2 Cups olive oil 
• 1 Large onion, minced 
• 2 Sprigs fresh mint 
• 2 tbsp Tomato paste 
• 1 Cup uncooked rice 
• 2-1/2 Cups water 
• Sea salt 
• Freshly ground pepper 
• 1 Lemon, cut in wedges

Method:

  1. Wash the spinach, chop and set aside to drain.
  2. Preheat a heavy-bottomed pot on low heat.
  3. Put olive oil in the pot and increase the heat to medium. Add onion and sauté till it is translucent.
  4. Add fresh mint and spinach. Sauté for 5 minutes, until wilted.
  5. Dilute the tomato paste in the water and add to the pot, with salt and pepper to taste.
  6. Increase heat and bring the mixture to a boil.
  7. Add rice, stir, and cover.
  8. Reduce heat and allow to simmer for 20 minutes or until the water has been absorbed.
  9. Do not stir during simmering.
  10. Serve with lemon wedges.
  11. Spinach & Tomato Rice is ready.

Methi Palak Dhokla

Ingredients:

• 1 cup Black-eyed Beans (chawli)
• ¾ cup Spinach (palak), chopped
• ¾ cup Fenugreek Leaves (methi), chopped
• 2 tbsp Oil
• 1 tbsp Green Chili-Ginger Paste
• 1½ tsp Asafetida (hing)
• 1 tbsp Fruit Salt
• Salt, to taste
• Water
• Green Chutney (for serving)
   
How to make Methi Palak Dhokla:


• Wash the beans thoroughly and soak them for at least 6 hours.
• Drain the soaked beans.
• Add ¾ cup of water to the beans and blend them in a liquidizer, so as to form a smooth batter.
• To the paste, add spinach, fenugreek leaves, oil, green chili-ginger paste, asafetida and salt. Mix the batter well.
• Place a steamer on the gas. When the water starts to boil, add the fruit salt to the batter and mix.
• Grease 3 thalis and pour the batter in them. Place the thalis in the steamer and steam for about 10 minutes.
• Serve hot with green chutney.

Ingredients:

• 1 cup Frozen Broccoli Spears (slightly softened)
• 2 cans Chicken Broth
• 3 tbsp Flour
• 1 tsp Salt
• 3 Green Onions (finely chopped)
• 3 tbsp Lemon Juice (optional)
• 3 tbsp Butter
• 1 cup Frozen Spinach (chopped)
• 1 pinch Pepper
• 1/2 cup Half and Half
   
How to make Broccoli Spinach Soup:


• Heat butter in a saucepan.
• Fry green onions until they turn brown in color.
• Add flour, salt and pepper and mix it well.
• Add chopped spinach, broccoli spears and chicken broth and mix again.
• Simmer it (covered) for 5 to 8 minutes approximately.
• Spoon half and half; cook for 5 more minutes.
• Add lemon juice for making it a little tangier.
• Enjoy it hot.

• 2 Eggs 
• 1/8 tsp Ground Nutmeg

How to make Baby Spinach Omelet:

• Beat eggs and stir in the baby spinach and parmesan cheese. Season it with onion powder, nutmeg, salt and pepper.
• In a small skillet coated with cooking spray, cook egg mixture for 3 min until partially set. Flip with a spatula and continue to cook for 2-3 min. Reduce heat to low and continue to cook for 2-3 min more.

Chana Palak

Chana Palak is delightful and tasty dish from the Punjabi cuisine. Learn how to prepare Chana Palak by following this easy recipe.






Ingredients:

• 1 cup Chickpeas (kabuli chana) (boiled)
• 4 cup Spinach Leaves 
• 2 Onions, chopped 
• 2 tsp Ginger-Green Chili Paste 
• 1 tsp Cumin Seeds (jeera) 
• 1 tsp Chana Masala Powder 
• 1 tsp Garam Masala Powder 
• ½ cup Curd 
• Salt (as per taste) 
• Oil (as needed)

How to make Chana Palak:

• Soak chickpeas in water, for 5 hrs and boil them till they get soft. Keep it aside.
• Chop and rinse spinach leaves and then boil them for 5 minutes.
• Now, take a pan and put 2 tbsp oil in it. When the oil is hot, put cumin seeds in it.
• When the seeds start to crackle, put chopped onions in the pan and fry till they start turning brown.
• Add the ginger chili paste and fry for a few more seconds.
• Put curd in the above mixture and fry till the masala cooks well.
• Add garam masala and spinach to it and mix well again.
• When done, add boiled chickpeas and salt to the above mixture and reduce the heat to simmer. Let the mixture cook for a few more seconds.
• Once the gravy is prepared, sprinkle coriander leaves on it.
• Now, in a small pan, heat 1 tbsp oil and add chana masala in it.
• Pour this mixture over the gravy and serve hot, with rotis.

Ingredients:


• 1 cup Fresh Coriander Leaves

• 1 cup Fresh Mint Leaves

• 1 tbsp Green Chillies (chopped)

• 1/2 cup Yogurt

• 1 tsp Cumin Seeds

• 1 tbsp Garlic

• 1/2 cup Peanuts

• 1 tbsp Lemon Juice

• 1 tsp Ginger (chopped)

• 1/2 tsp Tamarind Paste

• Salt to taste


How to make Green Chutney With Peanuts:

• In a blender, take cumin seeds, garlic, peanuts, lemon juice, yogurt, green chillies, salt, coriander leaves, mint leaves, ginger, tamarind paste and a little water.

• Blend it into a smooth paste.

• Adjust seasoning.

• Serve.

Ingredients:


• ¼ Cup Methi

• ½ Cup Toor Dal

• 10 Curry Leaves

• A pinch of Asfoetida Powder

• 5 Red Chilies

• 6 Green Chilies ( Sliced)

• ¼ tsp Pepper Powder

• 1 tsp Sambar Powder

• 1 tsp Mustard Seeds

• 1 inch piece of Tamarind

• Coriander Leaves

• Oil

• Salt ( to taste)


How to make Methi Sambar:

• In a cooker add dal, methi, pinch turmeric in a cook till 2 whistles.

• In another boil tamarind water with salt. Add the cooked dhal mixture and boil it for 5 min.

• heat up a 1 tsp oil add mustard seeds, curry leaves and red chilies powder, Once they start splutter add sambar powder and pepper powder.

• Fry it for 2-3 sec and pour this mixture on the sambar and add the green chillies and boil for 10-15 min.

• Turn off the stove and garnish with coriander leaves.


Suggestions:

Serve with bhaji or rice.

Ingredients:
• 2 Potatoes


• 1 ½ cups florets of Cauliflower


• 1 cup Methi Leaves (finely chopped)


• ¼ tsp Hing (asafoetida)


• 1 tsp Jeera (cumin seeds)


• ½ tsp Ginger Paste


• ½ tsp Chilli Paste


• 2 tsp Chat Masala


• Oil (as required)


• Salt to taste


How to make Aloo Gobi Methi Tuk:


• Peel the skin of the potatoes and cut them lengthwise into thick wedges.


• Heat oil in a pan and first fry the cauliflowers until done.


• Take out the cooked cauliflowers and put some more oil. Now fry the potatoes and take them out in a separate plate.


• Now take two tablespoons of oil in a nonstick pan or kadhai.


• Add to it cumin seeds and a pinch of hing.


• When the seeds start spluttering, add the chilli paste and ginger paste.


• Saute for a while and then add the chopped methi leaves.


• Saute till the leaves turn light brown.


• Now add the fried cauliflower and potato pieces.


• Saute properly and then add salt and chat masala.


• Mix well and serve hot Aloo Gobi Methi Tuk with parathas.

Ingredients:
• 2 Bunches palak
• 2 Potatoes
• 2 Tomatoes
• 1 Onion
• 2 Garlic flakes
• 1 Ginger
• 1 tsp cumin powder
• 1 tsp Corainder powder
• 1/2 tsp Red chilli powder
• 1/2 tsp Turmeric powder
• Salt to taste
• Oil for frying

How to make Aloo Palak:
• Cut palak, onion, tomatoes and potatoes.
• Grind ginger and garlic to make a paste.
• Fry onions till they turn transparent.
• Add cumin powder, coriander powder, red chilli powder and turmeric powder.
• Add ginger garlic paste.
• Mix it well.
• Add potatoes and tomatoes.
• Cook till oil leaves the side of the pan.
• Add palak and salt.
• Cook it for 20 minutes over medium flame.
• Aloo Palak is ready.

Chickpea And Spinach Curry

Ingredients:

• 2 Tomatoes (pureed)

• 1 Onion (finely chopped)
• 1 cup Cooked Chickpeas
• 3 Green Chilies (chopped)
• 1 tsp Garam Masala
• 1 tbsp Pepper Powder
• 1 tbsp Oil
• 1 cup Spinach (chopped)
• 1 tsp Ginger Garlic Paste
• Salt to taste
How to make Chickpea And Spinach Curry:

• Take a kadai and pour oil into it. Add finely chopped onions.

• Put ginger garlic paste and fry for a few minutes.
• Add green chilies, tomatoes, garam masala, salt and pepper. Add some water and let it cook for 2-3 minutes.
• Add spinach leaves to it after cooking for 3 minutes and leave it again for 2 minutes.
• Add cooked chickpeas and some water and let it cook for 10 minutes.
