Chicken Chapali Kabab

Chicken Chapali Kabab is a mouth watering tasty chicken recipe.  




Ingredients :

1 kg Chicken mince
1 cup Corn meal
1 bunch Mint leaves
1 Onion chopped
3 Eggs
4 Green chilies
4 Tomato
1 tsp Cumin seeds
1 tsp Whole black pepper
1 tbsp Crushed red pepper
2 tbsp Pomegranate seeds
2 tbsp Whole coriander
to taste Salt

Method :


  1. Chop 1 kg chicken mince well.Beat 3 eggs well and fry like omelet. Keep aside.
  2. Grind together 2 tbsp whole coriander, 1 tsp black pepper and 1 tsp cumin seeds.
  3. In a bowl put together chicken mince, 2 tbsp pomegranate seeds, salt to taste, fried eggs, ground mixture of black pepper, 4 chopped tomatoes, 4 chopped green chilies, 1 chopped onion, 1 bunch of chopped mint leaves, 1 tbsp crushed red pepper and 1 cup corn meal. 
  4. Mix well and keep aside for few minutes.
  5. Make Pattie and fry in a frying pan with ghee or oil as required.

Cauliflower Peas Masala

Cauliflower Peas Masala is a very popular Kerala recipe. Cauliflower Peas Masala is a semi gravy side dish. This is a good combination of vegetables with basic spices. It tastes good with Chapathi, Naan, Roti or any other Bread.




Ingredients :

Oil - 2 Tbsp
Cauliflower cut into florets - 1
Green Peas fresh or frozen - ¼ Cup
Cumin Seeds - 1 tsp
Ginger grated - 1 tsp
Garlic grated or paste - 1 tsp
Water - 400 ml
Salt to taste - 2
Coriander powder - 2 tsp
Red Chilli Powder - 1 tsp
Tomato Puree - 2 Tbsp
Garam Masala Powder - ½ tsp
Amchoor Powder/Dry Mango Powder - 1 tsp
Coriander Leaves chopped - a handful

Method:


  1. Heat Oil in a pan, add Cumin Seeds. Then add the Ginger, Garlic, Red Chilli Powder, Coriander Powder. Fry for few seconds.
  2. Then add the Cauliflower and Peas along with some Salt, Tomato Puree and water.
  3. Cover and cook until tender. Take care not to over cook as it might become paste.
  4. Then add the Garam Masala and Amchoor Powder. Mix well and take it off from heat.
  5. Garnish with Coriander Leaves / Cilantro.
  6. Serve hot with choice of your bread.

Andhra Spicy Chicken Curry

Ingredients:

• 1 whole Chicken(with bones)
• 2 Yellow Onions (medium size chopped)
• 2 medium Tomatoes (chopped)
• ¼ cup Cilantro
• 5 Green Chillies
• 2 tbsp Poppy Seeds( mustard seeds)
• 50 Cashew Nuts
• 3 tbsp Ginger & Garlic paste
• 3 tbsp Red Chilli Powder
• 2 Cloves
• 1 Elachi
• 3 tbsp yogurt
• ¼ tsp Turmeric (haldi)
• 1 tsp Garam Masala
• 5 tbsp Vegetable Oil
• 1 cup Water
• Salt to taste
   
How to make Andhra Spicy Chicken Curry:


• Clean (wash) the cut chicken in a big bowl, by adding yogurt,Ginger & Garlic paste, turmeric, salt, red chilli powder and stir everything, and cover the bowl and let it marinate for an hour.
• In a frying pan add the poppy seeds and fry them till they turn golden brown.
• Grind them till they come in to a fine powder, and add the cashew nuts. And make it into a fine powder.
• Cut the onions into small pieces , cut chillies in to long pieces and add them to it.
• Chop the tomatoes and set them aside.
• In a big pan (kadai), pour oil and add the cloves & elaichi in it.
• Add onions and deep fry them till they turn golden brown.
• Add the tomatoes and deep fry them till they become soft.
• Add chillies and the mixture of poppy seeds & the cashew nuts fry till the oil separates from it.
• Add the marinated chicken and deep fry it for about 4 or 5 minutes.
• Add a cup of water and stir them well and cover the pan (kadai) cook it in a medium heat.
• Once the chicken is well cooked, add garam masala and the chooped cilantro and turn off the stove.

Chana Dal Vada

Ingredients:

• 300 gms (10.5 oz) Chana Dal (Yellow Dal)
• 20 nos Green Chilies (finely chopped)
• 3 Onions medium sized (finely chopped)
• 1 1\2 tsp Ginger Garlic Paste
• 3 tbsp Coriander Leaves (finely chopped)
• 1 1\2 tsp Cumin Seeds (Jeera)
• 2 tsp Red Chili Powder
• Oil for deep frying
• Slt to taste
   
How to make Chana Dal Vada:


• Marinate the chana dal in water for about 2-3 hours.
• Grate the green chilies to a smooth paste.
• Grind the dal without adding water.
• Mix them into green chilies, onions, ginger-garlic paste, coriander leaves, cumin seeds, red chili powder and add salt to it.
• Take a part of the dal on the palm of your hand, and flatten them to make a vada.
• Deep fry the vada in a medium flame in hot oil.
 

Suggestions: Serve hot with green chutney.

Ingredients:

• 1 big Cabbage
• 3 Tomatoes (chopped)
• 1 Onion (chopped)
• 1 tsp Black Pepper
• ½ tsp Garlic Paste
• ¼ tsp Caraway Seeds (shahi jeera)
• ½ tsp Salt
• 1/8 cup Water
   
How to make Baked Cabbage:


• Heat the oven to 325 degrees.
• Quarter the cabbage.
• Boil the cabbage pieces in dutch oven or a kettle for about 10 minutes with little salt.
• Take a small bowl and mix in it chopped onions, garlic paste, salt, black pepper powder, chopped tomatoes, caraway seeds, salt and water.
• Now place the cabbage in a baking dish after removing the sections.
• Pour the masala on the cabbage.
• Now put the dish in the oven and cook for 30 minutes.
• In between make sure to saute so that the cabbage wedges are cooked evenly.
• Serve hot.

• 500 gm Paneer (Prepare small Paneer balls)
• 4 tbsp Corn Flour

• 2 tbsp Soya Sauce
• Salt to taste
• Oil for frying
• 1 Green Capsicum (chopped)

How to make Chili Paneer:


• Mix Paneer balls with corn flour fry it in a kadai till it become brown.
• In a separate kadai, fry onions till brown.
• Cut green chilli into small pieces and add it to fried onion.
• Then put small pieces of capsicum and fry it for sometime.
• Add Fried Paneer to it.
• Then drop tomato/chill/soya sauce into kadai.
• Add salt also and stir it for 3/4 mints.
• Chili Paneer is ready.

Ingredients:

• 2 Chicken Breast or Boneless Chicken Leg (cut to pieces)
• 1/2 Onions (finely chopped)

• 2 cloves Garlic (finely chopped)
• 2 tbsp Soy Sauce (sweet)
• 1 tsp Corn flour (dilute in 1/2 cup of water)
• 1 tsp Black pepper (ground)

How to make Black Pepper Chicken:


•    Marinate chicken with black pepper and salt.
•    Heat up oil and fry the marinated chicken until half cooked and keep aside.
•    Then in the same pan reduce the oil and add onion, garlic capsicums and scallion and fry until fragrant.
•    Then add half cooked chicken and stir.
•    Add sweet soy sauce and corn flour. Lastly add tomatoes and salt to taste.
 

Suggestions: Serve with rice.

Ingredients:

• 300 g Paneer Cubes (Cottage Cheese) 
• 1 clove Garlic (crushed)

• 1 Red Pepper (chopped) 
• 1 cup Rice (cooked) 
• 2 tbsp Oil 
• Salt to taste

For Chili Sauce 

• 1/2 tsp red Chilies (ground) 
• 1 tbsp Coriander leaves (chopped) 
• 1 tsp green Chilies (chopped) 
• 2 cloves Garlic (crushed) 
• 2 tsp Corn Flour 
• 3/4 cup Water 
• 1 tbsp Lemon Juice 
• 1 tsp Oil 
• 1 tbsp Sugar 
• Salt to taste 

How to make Paneer Kebabs with Chilli Sauce:

• Mix paneer, ginger, garlic and salt in a bowl. Marinate it for 15-20 minutes.
• Alternately arrange paneer, red pepper and green pepper on the skewers.
• Brush them with oil and grill until they turn golden brown from all sides.

For Chilli Sauce

• Grind red chilies, green chilies, garlic, coriander leaves, lemon juice and sugar.
• Heat oil in a pan, add the chili mixture and cook it for few seconds.
• Mix the corn flour into water and stir this into chili mixture.
• Add the salt and cook the sauce till it becomes thick.
• Remove from heat and serve with the paneer kebabs.

Suggestions: Serve it with plain rice and chilli sauce.

Ingredients:
• 6 Eggs (boiled) 
• 8 tsp Oil 
• 4 Tomatoes (chopped) 
• 3 Onions (chopped) 
• A pinch of Turmeric Powder 
• Chili Powder (to taste) 
• Salt (to taste) 
• ½ tsp Aniseeds 
• Small piece of Cinnamon 
• Few Garlic Cloves 
• 1½ cup Coconut Milk

How to make Egg Curry Masala:
• Make cuts on eggs using a sharp knife.
• Heat oil in a pan and fry aniseeds and cinnamon for a moment.
• Add onions, tomatoes, and garlic. Stir well.
• Mix in turmeric powder, chili powder, and salt.
• Pour coconut milk and simmer to a boil.
• Add eggs and cook for another 2 minutes.

Ingredients:
• 4 Tomatoes (finely chopped) 
• 1 whole Chicken (chopped) 
• 10 Red Chilies (finely grinned) 
• ½ tsp Pepper Powder 
• ½ tsp Turmeric Powder 
• ½ tsp Fennel Seeds (finely grinned) 
• 2 tsp Ginger Paste 
• 50 gm Garlic Paste 
• 5 Cloves (crushed) 
• 1 Cinnamon Stick (crushed) 
• 100 gm Shallot (chopped in cube) 
• 5 Green Chilies (slit in the middle) 
• 1 strand Curry Leaves 
• Oil 
• Salt to taste

How to make Kerala Chicken Masala:
• Take a heavy bottom saucepan and place it at a medium heat then pour oil into it.
• Add the green chilies and fry it for a minute.
• To it now add turmeric, fennel, red chili, cloves, ginger, garlic and cinnamon.
• Stir fry for five minutes or when it smells aromatic.
• Mix the shallot and stir for three minutes then add the tomatoes with salt.
• For seven minutes stir it fry then add the chicken pieces.
• Pour water after stirring it for ten minutes then lower the flame and tight seal the saucepan.
• Fifteen minutes later open the lid and stir the chicken then cover it for another ten minutes or when it is tender.
• Turn off the flame when the meat is cooked and appears dry.

Suggestions:
Best serve it with roti, pulao, veg-briyani or rice.

Ingredients:


• 250 g Gram Flour

• 100 g Cabbage, chopped finely

• 100 g Cauliflower, chopped finely

• 200 g Onion, chopped finely

• 5 Green Chilies, chopped

• 1 Cup Coriander Leaves, chopped

• 2 Big Carrots, grated

• 1 tsp Pomegranate Seeds, crushed

• 1 tsp Red Chili Powder

• Oil, for deep-frying

• Salt, to taste


How to make Sindhi Pakora:

• Take a bowl and put gram flour in it. Make a thick batter by adding water in it and making sure that the lumps are not formed in it.

• Now, mix all the cut vegetables in it along with spices. Add water or flour as required, mix well again and make large rectangular balls.

• Now, take a heavy bottomed pan and heat oil in it. When hot, fry the rectangular balls.

• Remove it on the clean kitchen towel and cut thick slices out of these balls. Fry them again till they get crispy.

• Serve hot with chutney and tomato sauce.

Baked Fish Masala is a healthy and nutritious dish. Learn how to make/prepare Baked Fish Masala by following this easy recipe.




Ingredients:

• 1 kg Fish (boneless)

• 2 big Onions (paste)

• 1 tbsp Ginger Garlic paste

• 1 tsp Turmeric

• 2 tbsp Chilli powder

• 1 tbsp Coriander powder

• 1 tsp Jeera powder

• 1 tsp Methi powder (fenugreek seeds)

• Tamarind - lime size (soak in water)

• Salt to taste

• Oil for frying


How to make Baked Fish Masala:

• Put oil in a wok and fry onion paste, add ginger garlic paste and turmeric.

• Then add chili powder and salt. Pour tamarind pulp and boil for 5 to 10 minutes.

• Put fish pieces and boil for 5 minutes, add coriander powder to it.

• Remove from fire and sprinkle cumin and fenugreek seed powder.

• Pour into baking dish.

• Preheat oven at 200 degrees C.

• Place the dish and bake for 30 minutes.

• Sprinkle little coriander and serve cooled.

• Baked Fish Masala is ready.

Ingredients:



• 1 Medium cauliflower


• 3/4 Cup maida


• 1-1/2 tbsp Garlic paste


• 2 tbsp Oil


• 1 tbsp Corn flour


• 1-1/2 tbsp Ginger paste


• 1 Cup finely chopped onions


• 1/4 tsp Ajinomoto


• 1 Chopped green chili


• 2-3 tbsp Tomato sauce


• 2 tbsp Soya sauce


• Finely chopped coriander leaves for garnishing


• Salt to taste


• Water as required


How to make Gobi Manchurian:


• Wash and cut gobi.


• Combine maida, corn flour, salt and water to make a fine paste.


• Add a tsp of ginger and garlic paste to it.


• Dip the gobi florets in the paste and deep fry until golden brown, set aside.


• Heat oil in another pan and add the remaining ginger and garlic paste, chopped onions and green chili to it.


• Now, combine ajinomoto, soya sauce and tomato sauce with it.


• Add fried Gobi and mix well.


• Garnish Gobhi Manchurian with coriander leaves.

Ingredients:



• 1 kg Cauliflower (chopped)


• 200 gms (7.054oz) Ginger (chopped)


• 300 gms (10.5 oz) Garlic (chopped)


• Coriander Leaves


• 1 Onions (chopped)


• 200 gms All purpose Flour/ Maida


• 1 Egg


• 1 Bell pepper (chopped)


• 10 Green Chilies (chopped)


• Agin-O- Motto (a pinch)


• Chili Powder


• Salt


• Black Pepper


• 5 tbsp Vinegar
How to make Chili Gobi:


• Mix all purpose flour, garlic paste, ginger, salt, beaten egg, chili powder and make a fine paste.


• Add cauliflower to the prepared paste and leave it for about 45 minutes.


• Heat some oil in a deep fry pan.


• Fry the mixed cauliflower inside it till it gets dark red in color.


• Add onions, bell pepper (capsicum), ginger, vinegar, green chilies, agin-o-motto, salt and garlic on another pan and deep fry it


• Add fried cauliflower to it and roast it thoroughly.


• Take chili gobi out and sprinkle coriander leaves on it.


Suggestions:


Serve hot as a side dish

• Combine flour with paprika, garlic powder, salt, black pepper, cayenne pepper, and marjoram in a large bowl.
• Add enough water to make a thick batter.
• Add chicken breast cubes and toss well until properly coated.
• Heat vegetable oil over medium high heat and toss in the chicken breast cubes.

Mirchi Roll

Ingredients:

• 1 tsp Cumin Seeds
• 4 Bhavanagri Green Chilies (Slit)
• 1 Medium Red Capsicum (Chopped into ¼ inch pieces)
• ½ tsp Fennel Seeds
• 8-10 Black Peppercorns
• 2 medium Potatoes (Boiled and Grated)
• 1 piece Ginger (Chopped)
• ¼ tsp Carom Seeds
• 1 tsp Red Chili Powder
• 16 Salted Biscuit
• 1 tbsp Oil
• ½ cup Cottage Cheese (Grated)
• ¾ tsp Dry Mango Powder
• Salt to taste

How to make Mirchi Roll:

• Slit the green chilies and remove the seeds.

• Take a pan and heat cumin seeds, fennel seeds, carom seeds and black peppercorns.
• Mix potato, cottage cheese and ginger in a bowl.
• Pour the roasted spices in a mortar with a pestle with salt, red chili powder and dry mango powder.
• Add the mixture into potato mixture and blend it well.

Suggestions:

Garnish with red capsicum and serve immediately.

Peanut Masala

Ingredients:

• 1 cup Peanuts
• ½ cup Moong Dal
• Salt, to taste
• 1 Medium Onion, finely chopped
• 1-2 tsp Coriander Leaves, finely chopped
• 1 Lemon (juice)

How to make Peanut Masala:

• Take a bowl and mix all the ingredients in it.
• Serve immediately, with coffee or soft drink.
