Hyderabadi Chicken Curry

Helloo.. Tomorrow's sunday will be a special day with this special Hyderabadi chicken recipe..




Ingredients:

  • 1 kg - chicken, cleaned and cut into joints
  • 1/2 cup - grated Coconut
  • 2 cups - onion, finely chopped
  • 200 ml - thick Coconut Milk
  • 200 ml - Tomato puree
  • 15 - Dried red chillies
  • 1 tsp - Cumin seeds
  • 2 tsp - Coriander seeds
  • 6 cm piece - Cinnamon
  • a small piece - Nutmeg
  • 3 tbsp - cashew nuts, chopped
  • 5 tbsp - oil
  • 1 tbsp - ghee
  • 1 tbsp - Ginger Garlic paste
  • 2 tsp - Sugar
  • 2 tbsp - Lime juice
  • 4 - Cardamom
  • 6 - Cloves
  • Salt to taste


Method:

  1. Grind coconut, dried red chillies, cumin, coriander, cinnamon, nutmeg and cashew nuts to a smooth paste.
  2. Heat oil in a kadai and add onion and fry till it turns golden brown.
  3. Add ginger garlic paste and fry till fragrant.
  4. Add ghee, ground paste and fry till the oil separates.
  5. Add coconut milk, tomato puree and 1 cup of water. Boil it for 5 minutes. 
  6. Add chicken, salt and sugar.
  7. Cover and simmer till the chicken is cooked and the gravy is creamy.
  8. Stir in the lime juice(as per your choice) and serve.

Chicken Leg Curry

Chicken Leg Curry is one of the most delicious curry recipe.



Ingredients:

5 chicken legs
2 tbsp curd
1/2 tbsp fresh cream
1 big onion thinly chopped
1 big tomato thinly chopped or pureed
1 tsp ginger paste
1 tbsp garlic paste
2 green chillies chopped
1 dried Kashmiri red chilli
1 bay leaf
1/2 tsp cumin seeds
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1-1/2 tsp coriander powder
1 tsp garam masala powder
A pinch of black pepper powder
Vegetable oil
Salt to taste

Method:

  1. Wash and clean the chicken legs thoroughly in warm water.
  2. Combine the yogurt, salt, black pepper powder, fresh cream and turmeric powder.
  3. Coast the chicken legs evenly in the marination.
  4. Keep aside at least for 30 minutes.
  5. Heat 2 tsp oil in a pan.
  6. Add kashmiri red chilli, bay leaf and cumin seeds.
  7. Saute for few seconds and add ginger-garlic paste and green chillies.
  8. Fry for few seconds and immediately add chopped onion.
  9. Fry until onion turns into light golden brown in color.
  10. Add thinly chopped tomatoes, salt and red chilli powder.
  11. Mix well and cook until the nice of color of curry comes out.
  12. Add 2 cups of water along with the chicken.
  13. Mix well, add coriander powder and garam masala powder.
  14. Cover the pan and bring the curry to few boils.
  15. Leave to cook on low flame for 4-5 minutes.
  16. Serve hot with roti or rice.


Tips: 
Add more water to make more curry recipe, but bring to few boils. Else add hot water in the dish and stir.
At the time of serving you can serve the dish with the nuts, cilantro and mint leaves.

Chicken Chapali Kabab

Chicken Chapali Kabab is a mouth watering tasty chicken recipe.  




Ingredients :

1 kg Chicken mince
1 cup Corn meal
1 bunch Mint leaves
1 Onion chopped
3 Eggs
4 Green chilies
4 Tomato
1 tsp Cumin seeds
1 tsp Whole black pepper
1 tbsp Crushed red pepper
2 tbsp Pomegranate seeds
2 tbsp Whole coriander
to taste Salt

Method :


  1. Chop 1 kg chicken mince well.Beat 3 eggs well and fry like omelet. Keep aside.
  2. Grind together 2 tbsp whole coriander, 1 tsp black pepper and 1 tsp cumin seeds.
  3. In a bowl put together chicken mince, 2 tbsp pomegranate seeds, salt to taste, fried eggs, ground mixture of black pepper, 4 chopped tomatoes, 4 chopped green chilies, 1 chopped onion, 1 bunch of chopped mint leaves, 1 tbsp crushed red pepper and 1 cup corn meal. 
  4. Mix well and keep aside for few minutes.
  5. Make Pattie and fry in a frying pan with ghee or oil as required.

Baked Lemon Chicken

Ingredients:

 4 Chicken Breasts (boneless and skinless) 
 1 cup Lemon Juice (freshly-squeezed) 
 1 cup All-Purpose Flour 
 1/2 cup Chicken Broth 
 2 tbsp Olive Oil 
 1 tsp Kosher Salt 
 1 tbsp Brown Sugar 
 1 tbsp Cornstarch

Method:

  1. To prepare marinade, mix lemon juice, olive oil, kosher salt and red pepper flakes in a small bowl.
  2. Place chicken breasts in a large container and pour marinade over it.
  3. Coat the chicken breasts completely with it and refrigerate, covered, 20 to 40 minutes.
  4. Meanwhile, preheat oven to 350 degrees F.
  5. Place flour in a shallow dish. Using tongs, remove chicken pieces from marinade and coat in flour.
  6. Transfer chicken breasts to a 9 x 13 glass baking dish.
  7. Combine brown sugar and cornstarch together in a bowl and add this to 1/2 cup chicken broth.
  8. Stir until the cornstarch is completely dissolved.
  9. Pour the mixture over the chicken breasts.
  10. Bake for 20 to 25 minutes until chicken is cooked through.
  11. Serve with freshly prepared rice.

Ingredients:

• 1.5 kg Chicken Breast (boneless, cubed) 
• 10-12 cloves Garlic (minced) 
• 1 tbsp Ginger (grated) 
• 1 tbsp Black Peppercorns (crushed) 
• 1.5 tbsp Dijon Mustard 
• 1 tbsp Lemon Juice 
• 1 tbsp Honey 
• 4 Red Chilies (chopped) 
• 1 tsp Sugar 
• 2 tbsp Olive oil 
• 2 medium Onions (sliced) 
• Salt to taste

How to make Grilled Pepper Chicken:

• Combine together garlic, ginger, peppercorns, mustard paste, lemon juice and salt in a large bowl. Add honey and mix again.
• Add chicken to this mixture and marinate for 30 minutes.
• Preheat the oven to 350 degree F.
• Combine red chilies, sugar, salt and oil in a small bowl.
• Remove the chicken from marinade and spread the chili mixture evenly on it.
• Arrange it on a greased baking sheet with sliced onion on the base.
• Pour the remaining marinade and chili mixture over the chicken, reserving little for further use.
• Grill in the oven for 20-25 minutes, basting with remaining marinade and chili mixture.
• Let it cool in the oven for 8 minutes.
• Remove and serve.

Andhra Spicy Chicken Curry

Ingredients:

• 1 whole Chicken(with bones)
• 2 Yellow Onions (medium size chopped)
• 2 medium Tomatoes (chopped)
• ¼ cup Cilantro
• 5 Green Chillies
• 2 tbsp Poppy Seeds( mustard seeds)
• 50 Cashew Nuts
• 3 tbsp Ginger & Garlic paste
• 3 tbsp Red Chilli Powder
• 2 Cloves
• 1 Elachi
• 3 tbsp yogurt
• ¼ tsp Turmeric (haldi)
• 1 tsp Garam Masala
• 5 tbsp Vegetable Oil
• 1 cup Water
• Salt to taste
   
How to make Andhra Spicy Chicken Curry:


• Clean (wash) the cut chicken in a big bowl, by adding yogurt,Ginger & Garlic paste, turmeric, salt, red chilli powder and stir everything, and cover the bowl and let it marinate for an hour.
• In a frying pan add the poppy seeds and fry them till they turn golden brown.
• Grind them till they come in to a fine powder, and add the cashew nuts. And make it into a fine powder.
• Cut the onions into small pieces , cut chillies in to long pieces and add them to it.
• Chop the tomatoes and set them aside.
• In a big pan (kadai), pour oil and add the cloves & elaichi in it.
• Add onions and deep fry them till they turn golden brown.
• Add the tomatoes and deep fry them till they become soft.
• Add chillies and the mixture of poppy seeds & the cashew nuts fry till the oil separates from it.
• Add the marinated chicken and deep fry it for about 4 or 5 minutes.
• Add a cup of water and stir them well and cover the pan (kadai) cook it in a medium heat.
• Once the chicken is well cooked, add garam masala and the chooped cilantro and turn off the stove.

Chicken Hazaarvi

Ingredients:
 

• 8 pieces Chicken Breasts (boneless)
• 2 tsp Ginger Paste
• 2 tsp Garlic Paste
• ½ cup Cheese (grated)
• 4-5 Green Chilies (chopped)
• ¼ tsp Mace Powder
• ¼ tsp Nutmeg Powder
• 2 tsp Coriander Leaves (chopped)
• 1 tsp White Pepper Powder
• Salt (to taste)
• 1 Egg
• ¾ cup fresh Cream
• Butter (for basting)
   
How to make Chicken Hazaarvi:
 

• Chop the chicken breasts into 2-inch cubes.
• Apply ginger paste, garlic paste, white pepper powder and salt to the chicken cubes. Mix thoroughly and set aside.
• Mash the cheese to make it smooth.
• Add green chilies, mace powder, nutmeg powder, coriander leaves and salt.
• Add egg and mix well.
• Add the chicken to the cheese mixture.
• Add cream and mix well.
• Refrigerate the mixture for 2 to 3 hours.
• Remove the chicken and pass them through the skewers.
• Cook them in a hot tandoor or pre-heated oven (200 °C) till the chicken is just cooked and slightly colored.
• Baste the chicken with butter and cook for another 2 minutes till the chicken is completed cooked.
• Transfer onto a serving plate.
• Serve hot.

Ingredients:

• 2 Pounds skinless, boneless chicken breast halves - cut into 1-1/2 inch pieces
• 6 Almonds
• 8 Cloves garlic
• 6 Jalapeno peppers, seeded and chopped
• 1 Inch piece fresh ginger root, peeled
• 1 Lemon, juiced
• 1/2 Cup heavy cream
• 1 Cup chopped fresh cilantro
• 2 tbsp Butter
• Salt to taste
   
How to make Reshmi Kebab:


• Soak almonds in water for about 15 to 20 minutes, drain.
• Put the almonds, peppers, garlic, ginger, and cilantro into the bowl of a food processor and blend it till smooth.
• Add salt to it and blend in lemon juice and cream.
• Place the mixture to a big, non metallic bowl.
• Place the chicken into the bowl and turn it to coat.
• Cover and marinate into the refrigerator for about 24 hours.
• Preheat the grill for high heat and lightly oil grate.
• Remove the meat from the marinade and thread onto the skewers.
• Brush chicken with butter and arrange the skewers on hot grate and cook it till cooked through.
• Silken Kebabs are ready to serve.

• 500 g Chicken (chopped)

• 1 Pinch Saffron

• Cook for half an hour on a low flame with one cup water.
• Garnish with shredded pista.

Ingredients:

• 2 Chicken Breast or Boneless Chicken Leg (cut to pieces)
• 1/2 Onions (finely chopped)
• 2 Capsicums (sliced)

• 2 cloves Garlic (finely chopped)
• 2 tbsp Soy Sauce (sweet)

•    Marinate chicken with black pepper and salt.
•    Heat up oil and fry the marinated chicken until half cooked and keep aside.
•    Then in the same pan reduce the oil and add onion, garlic capsicums and scallion and fry until fragrant.
•    Then add half cooked chicken and stir.
•    Add sweet soy sauce and corn flour. Lastly add tomatoes and salt to taste.

Ingredients:

• 1 kg Basmati Rice 
• 1 kg Chicken (cut into cubes) 
• 100 g Oil 
• 400 g Onions 
• 200 m Yogurt 
• 1 tsp Garam Masala Powder 
• 1½ tbsp Ginger-Garlic Paste 
• 1 tsp Red Chili Powder 
• Salt (to taste) 
• Few Coriander & Mint Leaves (chopped) 
• 200 g Tomatoes (chopped) 
• 2 tsp Whole Garam Masala 
• 2 Lemons 
• Butter (for greasing)

How to make Kachi Biryani:

• Combine garam masala powder, red chili powder, ginger-garlic paste, yogurt, mint, coriander leaves, and whole garam masala together. Grind into a fine paste.
• Marinate chicken with this mixture and set aside for 4 hours.
• Rinse rice and soak for 30 minutes.
• Heat oil and fry onions until brown.
• Add tomatoes and stir fry for few minutes.
• Place the onions and tomatoes over the chicken.
• Add juice of one lemon.
• Boil rice for 2-3 minutes and drain excess water.
• Butter a pot and place in the marinated chicken.
• Add the remaining oil from browned onions over the chicken.
• Spread the rice over it. Cover tightly with a foil.
• Place it on high flame for 5 minutes and reduce the heat. Cook for 15 minutes.
• Remove from heat and let covered for another 15 minutes.
• Serve hot with raita or chutney.

• 250 g Mushrooms (chopped) 
• 300 g Chicken

• Combine chicken with little turmeric powder, enough water, and salt in a pressure cooker and cook until tender. Separate the bones and meat.
• Slice the meat into small pieces.
• Heat oil in a pan and fry green chilies, ginger, garlic, and onions.
• Add garam masala, pepper powder, and turmeric powder. Mix and cook well.
• Add mushrooms and stir well.
• Flavor with salt to taste and cook covered for 10 minutes.
• Add chicken and cook for another 6-8 minutes, stirring continuously.
• Serve hot with rice.

Ingredients:

• 6 large boneless & skinless Chicken Thighs 
• 2 tbsp Oil 
• 1 large Onion (finely diced) 
• 1-2 cm Ginger (finely grated) 
• 3 cloves Garlic (minced) 
• ½ tsp Chilly Powder 
• 1 tsp Turmeric 
• 2 tsp Mixed Spices 
• 1 tbsp Brown Sugar 
• 1 can Tomatoes (chopped) 
• 1 can Coconut Milk 
• 1 Cauliflower 
• Salt & Pepper (to taste) 
• 2 large handful Spinach

How to make Cauliflower And Chicken Curry:

• Cut the chicken thighs into bite-size pieces and cauliflower into florets.
• Heat 1 tbsp oil in a frying pan and fry the chicken thighs until brown on all sides.
• When cooked, remove and keep aside.
• Add the remaining 1 tbsp oil in the same pan, and fry onion on medium flame until soft.
• Add ginger and garlic. Cook for 1 minute ensuring that you do not burn the mix.
• Add chilly powder, turmeric, mixed spices, brown sugar & cook for another minute, stirring continuously.
• Add tomatoes and coconut milk. Stir well.
• Finally, add chicken & cauliflower, cook for 10 minutes until both the ingredients are soft and well-cooked.
• Pour some water to make the curry thick.
• Add salt, pepper, and spinach. Stir until it starts drooping.
• Serve hot with steamed rice or bread.

Ingredients:
• 2 tsp Soya Sauce 
• 1 tbsp Vinegar 
• Salt to taste 
• ½ kg (35 ounce) Chicken 
• 1 cup (236ml) Fresh Corn 
• 3 tbsp Corn Flour 
• 1 tsp Ginger-Garlic paste 
• ½ tsp Black Pepper Powder 
• ½ cup Coriander Leaves (chopped)

How to make Chinese Chicken Corn Soup:
• Put the chicken in a pressure cooker along with salt, black pepper powder, ginger garlic paste and 3 cups of water.
• Pressure cook for 20 min on a medium heat.
• Now take out all the bones and make small pieces of the chicken.
• Take a pot; add chicken pieces, corn and water.
• Cook at medium heat for about 10 min and stir it slowly.
• To make a thick liquid take a cup water and mix the corn flour
• Add this liquid to the chicken and corn.
• Stir well while mixing.
• Now put the remaining ingredients.
• Cook at a high heat and mix salt if needed.
• Garnish it with coriander leaves.

Suggestions:
Serve hot with chili sauce

Ingredients:
• 4 Tomatoes (finely chopped) 
• 1 whole Chicken (chopped) 
• 10 Red Chilies (finely grinned) 
• ½ tsp Pepper Powder 
• ½ tsp Turmeric Powder 
• ½ tsp Fennel Seeds (finely grinned) 
• 2 tsp Ginger Paste 
• 50 gm Garlic Paste 
• 5 Cloves (crushed) 
• 1 Cinnamon Stick (crushed) 
• 100 gm Shallot (chopped in cube) 
• 5 Green Chilies (slit in the middle) 
• 1 strand Curry Leaves 
• Oil 
• Salt to taste

How to make Kerala Chicken Masala:
• Take a heavy bottom saucepan and place it at a medium heat then pour oil into it.
• Add the green chilies and fry it for a minute.
• To it now add turmeric, fennel, red chili, cloves, ginger, garlic and cinnamon.
• Stir fry for five minutes or when it smells aromatic.
• Mix the shallot and stir for three minutes then add the tomatoes with salt.
• For seven minutes stir it fry then add the chicken pieces.
• Pour water after stirring it for ten minutes then lower the flame and tight seal the saucepan.
• Fifteen minutes later open the lid and stir the chicken then cover it for another ten minutes or when it is tender.
• Turn off the flame when the meat is cooked and appears dry.

Suggestions:
Best serve it with roti, pulao, veg-briyani or rice.

Capsicum Chicken

Ingredients:


• ½ kg Chicken

• 1 tsp Red Chili Sauce

• 2 tsp Soya Sauce

• 3 large Onions (sliced)

• 3 Green Capsicum (sliced)

• 2 tsp Red Chili Powder

• 2 tsp Vinegar

• ½ cup Oil

• Salt (to taste)


How to make Capsicum Chicken:

• Slice the chicken into 2 inch pieces.

• Heat oil in a pan and fry onions and capsicum for 7-8 minutes.

• Add chicken and cook until light brown.

• Mix in red chili powder, soya sauce, vinegar, red chili sauce, and salt. Cook for another 2 minutes.

• Pour enough water to half cover the chicken and cover the pan. Cook for 5 minutes.

• Uncover and cook until the gravy absorbs in completely.

• Serve hot.

Avocado Chicken Sandwich

Ingredients:


• ½ cup Butter (soft)

• 6 slices Corn Bread

• 1/3 cup Chicken (cut into stripes)

• 1 ripe Avocado (sliced)

• 2 Tomatoes (thinly sliced)

• Salt and Pepper (to taste)

• 2 tbsp Lemon Juice


How to make Avocado Chicken Sandwich:

• Heat 2 tbsp of butter in a pan and fry chicken until crisp.

• Spread remaining butter over corn bread.

• Arrange chicken, avocado and tomato slices on 3 bread slices. Sprinkle with salt and pepper. Close sandwich with remaining bread slices.

• Drizzle with lemon juice over the sandwiches.

• Avocado Chicken Sandwich is ready to serve.

Spanish Chicken and Rice

Spanish Chicken and Rice, or Arroz Con Pollo, is a tasty Spanish delicacy. Learn how to make/prepare Spanish Chicken & Rice by following this easy recipe.


Ingredients:


• 1 frying Chicken (cut up)

• 1/4 cup Vegetable Oil

• 1 cup Celery (chopped)

• 1 Green Bell Pepper (chopped)

• 1/2 cup Onion (chopped)

• 1 clove Garlic (minced)

• 1 cup raw long-grain Rice

• 1 can (8 ounces) Tomato Sauce

• 1½ cups Water

• 1/4 to 1/2 tsp Saffron Threads (crumbled)

• 2 tsp Salt

• 1/4 tsp Pepper

• 1 tsp Brown Sugar (optional)

• 1 jar (4 ounces) Pimientos (chopped)


How to make Spanish Chicken and Rice:

• Heat oil in a heavy skillet, over medium heat. Brown chicken and remove from heat.

• Pour off all, but 2 tbsp of oil. Add in celery, green pepper, onion, garlic, rice, tomato sauce, water, saffron, salt, pepper, and sugar. Stir the ingredients well.

• Transfer the chicken pieces back to the skillet.

• Cover the skillet and cook for 30-40 minutes, on low heat. The rice should be cooked by this time.

• Fluff the rice with a fork and add pimiento.

• Heat through and serve warm
