కావలసినవి:
  • మామిడిపళ్ళు-2
  • పాలు-4 కప్పులు
  • చక్కర-పావ్ కప్పు
  • యాలకుల పొడి-1 స్పూన్
తయారుచేయు విధానం:
  • మమిద్దిపల్లు చెక్కు తీసి,ముక్కలుగా కోసి మిక్సీలో బ్లెండ్ చేయాలి.
  • తరువాత పాలు,చెక్కెర,యాలకుల పొడి వేసి మల్ల బ్లెండ్ చేయాలి.
  • దీనిని ఫ్రిజ్లో ఉంచి చల్లబడిన తరువాత తాగాలి.

Amer Chatni

Amer Chatni is a popular tangy-sweet chutney right from the heart of Bengal. Learn how to prepare Amer Chatni by following this easy recipe.



Ingredients:

• 4 medium Raw Mangoes (Kairi) (peeled and cut into thick slices)
• 2 tsp Oil
• 2 tsp Panch Phoran (Saunf, Methi, Jeera, Kalonji, Rai)
• 2 Red Chillies
• 1 cup Sugar
• Salt to taste
   
How to make Amer Chatni:


• In a pan, heat oil and add panch phoron and whole red chillies and stir till it crackles.
• Add the mango slices and sauté for a minute.
• Add r two cups of warm water to the mango slices followed by sugar.
• Cook on medium heat till the sugar melts and the consistency turns thick.
• Now add salt and stir again.
• In another pan, dry roast the remaining panch phoron and pound it to a powder.
• Remove the chutney from heat and allow it to cool.
• Add this powder on top and serve.

Ingredients:

• 1 Kg Mangoes
• 1/2 Kg Jaggery
• Cinnamon stick
   
How to make Ambakalya:


• Peel the mangoes and cut into pieces.
• Cut jaggery into small pieces.
• Cook mango slices till they turn soft.
• Mix jaggery and water.
• Boil it till jaggery gets melted.
• Add mango slices and cinnamon stick.
• Cook it covered over medium flame for 10 minutes.
• Now cook it uncovered till it turns to thick syrup.
• Keep it for cooling.
• Ambakalya is ready.

Sliced Mango Pickle is a very tasty recipe. Learn how to prepare Sliced Mango Pickle by following this easy recipe.



Ingredients:

• 1 1/2 tsp Red Chili Pepper 
• 1/2 cup Mustard Oil 
• 1 1/2 tsp Turmeric 
• 1 tsp Onions Seeds 
• 3 tsp Glacial Acetic Acid 
• 1/2 cup Salt 
• 4 tsp Aniseeds 
• 1/2 kg Raw Mango Slices 
• 3 tsp Fenugreek 

How to make Sliced Mango Pickle:

• Add salt to the chopped raw mangoes; set it aside for 8 hours approximately.
• Remove the slices and add glacial acetic acid to the mango water; set it aside.
• Heat mustard oil in a pan.
• Add onion seeds, aniseeds, fenugreek, red chili pepper and salt.
• Fry it for about 5 seconds.
• Allow it to cool; add the mixture to the mango water.
• Spoon to a jar and keep it aside for about one week.
• Mix the mixture every day for better results.

Suggestions: Serve it with chapatis or rotis.

Aamras with kesar is a simple and delicious mango fruit recipe..It takes 20 min. for preparation. It is healthy and mostly children like this because of Aamras taste.



Ingredients:

• 1 cup Sugar (powdered)

• 21/2 cups Milk (chilled)

• 1 kg Ripe Mangoes

• 1/4 tsp Saffron


How to make Aamras With Kesar:

• Peel mangoes and chop them into cubes.

• In a blender, add mango cubes, milk, sugar and saffron; blend it until smooth.

• Pour the mixture into small bowls.

• Serve it chilled.

Ingredients:

• 4 cups Mango Flesh (cubed)

• ¼ tsp Saffron strands
• 2 cups Milk
• 1 cup Water
• 11/2 tbsp Sugar

How to make Aamras:

• In a microwave or stove top, heat the milk near boil. Crush the saffron strands, add it to the milk and let it stand for around 15 minutes.

• Use an electric blender, puree the mango flesh, water, milk and sugar.
• Add to it the saffron milk

Aam Ki Chutney

Ingredients:
• 1 tsp Fenugreek Seeds (roasted)
• 2 sprigs Curry Leaves
• 1 pinch Mustard (for seasoning)
• 1 tsp Mustard Seeds (roasted)
• 1 pinch Asafoetida
• 1 1/2 tbsp Oil
• 500 g Raw Mango
• 4 Red Chillies (roasted)
• Salt to taste

How to make Aam Ki Chutney:


• Chop the raw mango into small pieces and grind them well.

• Mix red chillies, salt, mustard seeds, fenugreek seeds and grind.
• Spoon the rough paste to a serving dish.

For seasoning
• Take a frying pan and heat some mustard in oil for few minutes.
• Now add curry leaves and Asafoetida.
• Spread it on the chutney.

Suggestions:
Serve with hot rice and ghee or with roti or dosa.

Mango Coconut Sauce

Ingredients:

• 2 Mangoes (peeled, pitted and cut into 1 inch chunks)

• ¾ Coconut Milk
• 2 tbsp fresh Lime juice
• ¾ cup Heavy Cream

How to make Mango Coconut Sauce:


• Put the mangoes in a blender and blend them until smooth.

• Pour the mango puree, coconut milk, heavy cream and lime juice into a saucepan and blend thoroughly. Bring it to boil over medium heat and serve immediately.

Aam Ki Lassi

Ingredients:

• 1 Mango
• 1 tbsp Sugar
• 1 cup Yogurt
• 2-3 strands Saffron (kesar)
• A pinch of Green Cardamom Powder

How to make Aam Ki Lassi:
• Wash the mango properly and then peel it and remove its seed.
• Grind its flesh into a mixer to make a paste out of it and transfer it into a bowl.
• Take yogurt, sugar and ice cubes and blend it properly in the same mixer for a minute.
• Add the mango paste and blend again for half a minute on minimum speed.

Suggestions:

Garnish with saffron strands and serve chilled.

Aam Lassi Slush is a refreshing beverage made with curd and mangoes. Learn how to make/prepare Aam Lassi Slush by following this easy recipe.



Ingredients:


• 2 Alphonso Mangoes
• 4 tbsp Sugar
• 1cup Curd
• 1tbsp Mint Leaves (finely chopped)
• 4-5nos Fresh Mint Leaves
• 6-8 Ice CubesHow to make Aam Lassi Slush:

• Peel the skin of the mangoes and cut them into small pieces.

• Now blend the mango pieces, curd, sugar and mint leaves in a mixer into a smooth puree.
• Refrigerate this mixture for 4 to 5 hours.
• Take out the mixture and again blend it to a smooth liquid.
• Put the juice in the serving glass .Add 2 to 3 ice cubes and garnish with fresh mint leaves.
• Enjoy cool Aam Lassi Slush in the hot summer afternoon.

Aam Ki Launji

Ingredients:

• 1 cup Raw Mango (peeled and diced)

• 5 tbsp Sugar
• ½ tsp Saunf (fennel seeds)
• ¼ tsp Kalonji (onion seeds)
• ¼ tsp Haldi (turmeric) powder
• A pinch of Hing (asafoetida)
• 2 tbsp Oil
• Salt to taste

How to make Aam Ki Launji:
• Peel the skin of the raw mangoes and take out the seeds.
• Now dice the mangoes into small pieces.
• Take five cups of water in a vessel and bring it to boil. Add salt, haldi powder, three tablespoon sugar and mangoes into it.
• Blanch the mangoes and drain out the extra liquid left in the vessel.
• Heat 2 tablespoons of oil in a separate pan and add saunf, onion seeds and a pinch of hing.
• Keep stirring till you get a sweet aroma.
• Now add little salt, 2 tablespoon sugar and the blanched mangoes into it.
• Saute for a while and remove from the flame.
• Enjoy this hot and instant pickle with puris or parathas.
