Broccoli and Carrot Soup

Broccoli and Carrot Soup is a quick to prepare and highly nutritious soup. Learn how to make/prepare Broccoli & Carrot Soup by following this easy recipe.





Ingredients:

• 1 medium Onion (chopped) 
• 2 medium Carrots (chopped) 
• 2 Celery Ribs (chopped) 
• 1 tbsp Butter 
• 3 cups Fresh Broccoli Florets 
• 3 cups Fat-free Milk (divided) 
• 3/4 tsp Salt 
• 1/2 tsp Thyme (dried) 
• 1/8 tsp Pepper 
• 3 tbsp All-purpose Flour 

How to make Broccoli and Carrot Soup:

• Cook the onion, carrots and celery in butter, in a large saucepan, for 3 minutes.
• Add broccoli and cook for another 3 minutes.
• Stir in 2¾ cups milk, salt, thyme and pepper.
• Bring to boil and reduce the flame.
• Cover and simmer for 5-10 minutes, so that the vegetables are tender.
• Combine the flour and remaining milk until smooth. Gradually stir into the soup.
• Bring to a boil & cook for 2 more minutes or until thickened.

Carrot And Tomato Smoothie

Ingredients:

• 4 medium Carrots

• 6 medium Tomatoes

• 2 tbsp Lemon Juice

• ½ stalk Celery (Chopped)

• Ice cubes as required

• Salt to taste


How to make Carrot And Tomato Smoothie:

• Cut the carrots into ½ inch cubes and tomatoes into quarters and freeze them for some time.

• Put the frozen tomato cubes in a blender and blend it until smooth. Add the frozen carrots and blend again.

• Add the ice cubes, fresh lemon juice and blend together again. Serve it in a stemmed glass chilled.

Ingredients:



• 9 Carrots


• ½ cup (4 ounces) Moong Dal


• 1 Onion (small)


• 2 Green Chilies


• Curry leaves


• 2 tsp Oil


• 3 Garlic Cloves (crushed)


• 2 Red Chilies


• 1/2 tsp Mustard Seeds (Sarso)


• 1/2 tsp Cumin Seeds (Zeera)


• 1 tsp Chana Dal (Chhola/ Kadale bele/ Kadala parippu)


• 1 tsp Urad Dal (Uddina bele/ Kolai dal/ Biri daali)


How to make Andhra Carrot Curry:


• Wash the moong dal and soak in water for 5 to 10 minutes.


• Chop the onions, green chilies and chop the carrots into small cubes shape


• Heat oil in the pan


• Add crushed garlic and saute for 15 seconds by reducing the flame to sim.


• Then add red chilies, cumin seeds, mustard seeds, urad dal, chana dal and saute till mustard seeds starts making popping sound


• Add chopped onions, green chilies, curry leaves and saute for 5 minutes


• Drain the water from the chopped carrots and moon dal before adding them in the pan


• Add enough salt, red chilli powder and turmeric powder. Stir them well once and close with lid.


• Leave it to cook on low to medium flame for 10 minutes, till the carrots become soft.


• Stir the curry in middle to avoid sticking on the sides of kadai.


Suggestions:


Serve hot with rice or chapati

Carrot Cheese Soup

Ingredients:


• 2 tbsp Butter or Margarine

• 2 tbsp All-purpose Flour

• 1 medium Carrot, diced

• 2 Green Onions, sliced

• 2 tbsp Ham, fully cooked and diced

• 2 cups Hot Chicken Broth

• 1/3 cup Cheddar Cheese, shredded

• 1 tbsp Fresh Parsley, minced

• 1/8 tsp Pepper

• 1 dash Hot Pepper Sauce

How to make Carrot Cheese Soup:

• Take a saucepan and melt the butter in it.

• Add flour and stir it until smooth.

• Heat in medium heat for 2 minutes and stir continuously.

• While stirring, add the carrots, onion and ham and cook for one minute.

• Slowly add the broth and boil until thickened.

• Reduce the heat and add cheese, parsley, pepper and pepper sauce.

• Now, heat until the vegetables are cooked and the cheese melted.

• Serve hot.

Ingredients:


• 4 medium Carrots (grated)

• 1 tsp Powdered Cardamom

• ¼ cup Condensed Milk

• 2 cups Milk

• ½ cup Sugar

• 2 tbsp Ghee

• Lots of Cashew and Pista

How to make Gajar Ka Halwa:

• Take ghee in a pan and shallow fry the grated carrots for 2 min.

• Pour into condensed milk and stir it until it combines well with the carrot.

• Mix in milk and stir it continuously.

• Put in sugar with cardamom and whisk until preferred consistency is achieved.

• Pour over cashewnuts and pista.

• 4 Carrot (chopped)

• 7-8 Beans (chopped)

• 1 Onion (sliced)

• 1/2 tsp Chili Powder

• 1/2 tsp Turmeric Powder

• 1/2 cup Coconut (grated)

• 1 tsp Coconut Oil

• 1 tsp Mustard Seeds

• 4 Curry Leaves

• Salt to taste

How to make Beans Carrot Poriyal:

• Mix together the chopped vegetables, onion, chili powder, turmeric powder and salt.

• Add some water and cook it well together, until the vegetables become soft.

• Heat a tsp of oil in a pan and toss mustard seeds.

• Add curry leaves and sauté for a while.

• Add the cooked vegetables to this and mix them with grated coconut.

• Cook the mixture until the poriyal is dry.

• Tasty Beans Carrot Poriyal is ready.

Serve it hot with rice /chapathi

Cabbage Carrot Curry

Cabbage Carrot Curry is a popular South Indian curry. Learn how to prepare Cabbage Carrot Curry by following this easy recipe.



Ingredients:

• 3 tsp Chana Dal (split Bengal gram)

• 1/4 cup Fresh Coconut (grated)

• 3 cups Cabbage (chopped)

• 1 cup Carrots (cut into small cubes)

• Salt (to taste)

For Seasoning:

• 5-6 Curry Leaves

• 4-5 Green Chilies (slit and cut into half)

• 3-4 tsp Vegetable Oil

• 1/2 tsp Mustard Seeds (Rai)

• 1/2 tsp Cumin Seeds (Jeera)

• 1-2 Red Chilies (broken into pieces)

• 1/4 inch piece of Ginger (finely grated)


How to make Cabbage Carrot Curry:

• First steam the chopped cabbage and carrots with some salt.

• Then boil the chana dal with a little water about 4-5 minutes.

• Take a pan and heat oil.

• Put the mustard and cumin seeds, and fry it until they start popping. T

• Now add green and red chilies, ginger, and curry leaves and stir for a few seconds.

• Put the steamed cabbage, chana dal and carrot and stir-fry for

• 2 min on medium heat.

• Now put grated coconut and cook for another 2 min.

• Serve it hot.


Suggestions: Serve with rice.

Carrot fry

Ingredients:

• 3 cups of washed and grated Carrots

• 1 Onions (cut into pieces)
• 1 cup grated coconut
• Curry leaves
• 1 tsp of Chana dal
• 1 tsp Urad dal
• 1 tsp Mustard seeds
• A few Red chilly pieces
• 1/2 tsp of Jeera
• 1/2 tsp Turmeric
• 1 tsp Chilly powder
• A pinch of Hing
• 3 tbsp Oil
• Salt

How to make Carrot fry:

• In a pan, heat oil and add curry leaves, chana dal, urad dal, jeera, mustard seeds, red chilies and hing.

• As the mustard seeds starts to splutter, add onion and fry until it turns light brown.
• Now add carrot and fry for some time.
• Add turmeric and salt and fry for 10 minutes more.
• When carrots are cooked, add chilly powder and the grated coconut to it and fry for 5 minutes.
• Now Carrot fry is ready.

Carrot Chutney

Ingredients:
• 1 cup Carrot (grated)
• 1 tsp Bengal gram Dal
• 1 tsp Mustard seeds
• Asafetida (a pinch)
• Curry leaves (few)
• 4 dry Chilies
• 2 tsp Oil
• Salt to taste

How to make Carrot Chutney:
• Heat oil in a kadai or a wok.
• Add muster seeds and let it splutter.
• Add Bengal gram, curry leaves, dry chilies, carrot and asafetida.
• Cook them for 5 minutes and grind them in a mixer.
• This chutney goes well with dosas and idlis

CARROT KHEER

Ingredients:

• 6-8 Fresh carrots

• 1 Litre full cream milk
• 2 Cups sugar
• 1/2 tsp Cardamom powder
• 1/4 tsp Saffron
• 5-6 Sliced almonds
• Some cashews

How to make Carrot Kheer:


• Wash the carrots and cut the edges.
• Cut the carrots into small pieces and boil it in a pressure cooker.
• In the meantime, boil the milk in a big vessel and leave it on very low heat.
• Place the boiled carrot & saffron into a grinder and make paste of it.
• Then add the carrot paste into boiling milk and keep it on normal heat.
• Stir the mixture continuously and add sugar (add additional sugar as per the taste).
• Add cardamom powder and stir well.
• Heat the mixture until boiling state.
• Now let it cool for sometime.
• Refrigerate it for cold serving.
• Decorate with cashews and sliced almonds before serving.

Suggestions:

Serve it cold or hot as per choice.

CARROT RICE

Ingredients:

• 1 Cup basmati rice, cooked
• 1 Cup fresh carrot, grated
• 1 Onion
• 2 Green chilies
• 1/2 Cup boiled peas
• 1 tbsp Urad daal
• 1 tbsp Cashew nuts
• 1 tsp Mustard seeds
• Salt to taste
• 1/2 tsp Turmeric powder
• 1/2 tsp Red chili powder
• 4 tsp Lemon juice
• Coriander leaves, for garnish
• Oil, for cooking

How to make Carrot Rice:

• Heat one tbsp oil in a shallow pan and add mustard seeds.
• When they splutter, add urad daal and cashew nuts.
• When the cashew nuts are brown, add chopped onion and green chilies.
• Fry till the onions are golden.
• Add turmeric, salt and red chili powder. Fry for a minute.
• Mix in the grated carrots and sprinkle little water.
• Keep the pan covered, on a low flame, till the carrots are done.
• Add boiled peas.
• Mix in the rice.
• Add lemon juice.
• Garnish with finely cut coriander leaves.
• Carrot Rice is ready.
