Broccoli and Baby Corn Vegetable

Ingredients:

• ½ cup Capsicums. cut into big pieces
• ½ cup Onions, cut into big pieces
• 1 cup Broccoli or Cauliflower, blanched and cut into big pieces
• ½ cup Baby Corn, sliced diagonally
• ¼ cup French Beans, parboiled
• A few pieces Cucumber, sliced diagonally
• 7 to 8 Cashew Nuts, fried lightly
• 1 tsp Garlic, finely chopped
• 1 tbsp Corn Flour
• A pinch of Sugar
• 2 pinches Black Pepper
• 2 tbsp Oil
• Salt to taste
   
How to make Broccoli and Baby Corn Vegetable:


• Heat oil in a frying pan, on high flame.
• Add the garlic and stir for a few seconds.
• Add in capsicums, onions, broccoli, baby corn, French beans and cucumber and stir fry for about 2 minutes.
• Dissolve cornflour in ¾ cup of water. Add it to the vegetables.
• Add sugar, black pepper and salt to the preparation and cook for another minute.
• Remove from heat, garnish with fried cashew nuts and serve hot.

Corn Capsicum Curry

Ingredients:

• 5- 6 Baby Corns 
• 2 Capsicums 
• 2 Onions 
• 1/4 cup Spring Onions, chopped 
• 3- 4 tbsp Coriander Leaves, chopped 
• 1 Tomato, chopped 
• 1 tbsp Tomato Sauce 
• 1 tbsp Soy Sauce 
• 1 tbsp Chilly Sauce 
• Salt (to taste) 
• ¾ cup Water 
• 2 tsp Chilly Powder 
• 1 tbsp Corn Flour

How to make Corn Capsicum:

• Boil the corns and slice them into 1-inch slanting pieces.
• Wash onions and capsicums & then dice them into square-shaped pieces, of approx 1 inch.
• Now, take a deep bottomed pan and heat some oil in it. When the oil becomes hot, fry onion pieces in it.
• Add chopped tomatoes to it and fry till they turn soft. Add chopped coriander leaves and spring onions and fry for a minute.
• Sprinkle some water and chilly powder over the above mixture and mix well.
• Add capsicum, salt, baby corns, tomato sauce, soy sauce and chilly sauce to it and saute them well, for 3 minutes.
• Dissolve the corn flour in some water and add to the mixture.
• Now, add the remaining water and mix well. Cook till the mixture gets a gravy consistency.
• Serve hot.

Stuffed Capsicums

Stuffed Capsicums is a tasty delicacy that goes great with a plateful of vegetable pulao. Learn how to make/prepare Stuffed Capsicums by following this easy recipe.


Ingredients:


• 12 medium sized Green Capsicums

• 3 Potatoes (boiled and mashed)

• 200 g Cottage Cheese (paneer), (grated)

• 1 large Onion (chopped)

• 1 inch piece Ginger (chopped)

• 3 Green Chillies (chopped)

• 10-12 Cashewnuts (coarsely ground)

• 12-15 Raisins

• 1 tsp Cumin Powder

• 1 1/2 tsp Red Chilli Powder

• 1 tsp Garam Masala Powder

• 2 tsp Dry Mango Powder (amchur)

• 1/2 cup Cheese

• Fresh Coriander Leaves (finely chopped)

• Salt to taste

• 2 tbsp Oil


How to make Stuffed Capsicums:

• Cut off the head of the capsicums and deseed them. Trim the bottom off the capsicum to allow it to stand still when cooking.

• In a bowl, mix together the potatoes, paneer, red chilli powder, dry mango powder, cumin powder, garam masala powder, cashew nuts, raisins, coriander leaves and salt and keep aside.

• In a pan, heat oil and cook onion till they turn pink and add green chillies and ginger to it.

• Add in the potato mixture and cook for two minutes. Remove from heat and divide the mixture into equal portions.

• Stuff the capsicum with the potato mixture and cover it with grated cheese.

• Preheat the oven 225 ºC and microwave the stuffed capsicums for fifteen minutes.

• Serve hot.

Ingredients:


• ½ kg Chicken

• 1 tsp Red Chili Sauce

• 2 tsp Soya Sauce

• 3 large Onions (sliced)

• 3 Green Capsicum (sliced)

• 2 tsp Red Chili Powder

• 2 tsp Vinegar

• ½ cup Oil

• Salt (to taste)


How to make Capsicum Chicken:

• Slice the chicken into 2 inch pieces.

• Heat oil in a pan and fry onions and capsicum for 7-8 minutes.

• Add chicken and cook until light brown.

• Mix in red chili powder, soya sauce, vinegar, red chili sauce, and salt. Cook for another 2 minutes.

• Pour enough water to half cover the chicken and cover the pan. Cook for 5 minutes.

• Uncover and cook until the gravy absorbs in completely.

• Serve hot.

Ingredients:


• 250g Capsicum (cut into two pieces each)

• 2 tsp Coriander Seeds

• 25g Sesame Seeds

• 25g Peanuts

• 25g Dry Coconut (grated)

• 1 tsp Chili Powder

• 1/4 tsp Mustard Seeds

• 1 bunch Curry Leaves

• A pinch of Fenugreek Seeds

• 50g Tamarind

• 75g Oil

• Salt (to taste)


How to make Capsicum Masala Curry:

• Roast coriander seeds, peanuts, sesame seeds, and dry coconut without oil, until golden.

• Cool and blend in a food processor, to make a smooth paste.

• Heat oil in a pan. Fry mustard, fenugreek seeds and curry leaves for a minute.

• When the seeds flutter, add capsicum. Fry for a while and transfer to a separate bowl.

• Fry the ground paste in the remaining oil until the oil separates.

• Add chili powder, tamarind water and salt. Cook until the gravy becomes thick.

• Now, add fried capsicum to the gravy and remove from heat.

• Garnish with coriander leaves.

• Serve hot.

Ingredients:


• 1 Coriander Leaves

• 1 tsp Turmeric Powder

• 1 big Capsicum, cut into small pieces

• 2 big Green Chilies

• 1 tsp Mustard

• 1 tsp Urad Dal

• 1 tsp Channa Dal

• 1 small cup Curd (Yogurt)

• 1 tsp Oil

• 1 pinch Asafoetida (Hing)

• Salt to taste


How to make Capsicum Raitha:

• Take a skillet and add 1 teaspoon oil.

• After it gets hot, add hing and mustard.

• Add the dal after the mustard sputters, and fry until they are slightly brown. Then, add green chilies and coriander leaves.

• Now add the capsicum and fry them along with salt and turmeric until it is cooked well. Let it cool.

• Add curd gradually and stir it.

• Serve with rice or chapati.

Aloo Capsicum Fry

Ingredients:



• 2 Potatoes (chopped large blocks)


• 1 Capsicum (chopped)


• 1 tsp Mustard Seeds


•  4 Curry Leaves


• 1 tsp Cumin Seeds (jeera)


• 1 Onion (chopped/sliced)


• 1 ½ tbsp Chili Powder


• Salt to taste

• One pinch Asafetida (ingu/hing)
How to make Aloo Capsicum Fry:


• Boil the potatoes for about 10 minutes till they are cooked and keep it aside.


• Heat the oil in the frying pan and toss the cumin seeds, mustard and curry leaves


• Fry the onion till it turns brown and then add capsicum into it.


• After sauteing the capsicum for about 4 minutes add chilli powder, salt and asafetida to it.


• Add this mixture to the cooked potatoes and slide it in the oven.


• Bake the mixture for about 50 minutes at 350F (177C).


• Hot Potato and Capsicum fry is ready to be served.

Baby Corn Capsicum Masala

Ingredients:
• 1 cup Capsicum, chopped
• 3 heads Baby Corn
• 1 cup Fresh Beans
• 2 Potatoes (medium sized)
• 3 Onions (medium sized)
• 1 Tomato (medium sized)
• 1 piece Ginger
• 5 Garlic Cloves
• 1 tsp Mustard Seeds
• 1 1/2 tsp Chili Powder
• 1 tsp Turmeric Powder
• 1 tsp Garam Masala Powder
• 1 tsp Cumin Seeds
• 15 Cashews
• 4 tsp Kasthuri Methi

How to make Baby Corn Capsicum Masala:
• Chop the baby corn into small pieces.
• Wash the potatoes and peel them. Cut them into medium-sized pieces.
• Add the chopped potato, baby corn and fresh beans to a bowl of salt water.
• Cook this in a cooker for 15 minutes.
• Peel the onions and chop them into tiny pieces.
• Wash and chop tomatoes.
• Peel the garlic cloves.
• Add the chopped onions, tomatoes, ginger, garlic and cashews to a blender and blend until it becomes a smooth paste. Add water, if needed, in order to get the right consistency.
• Take a pan and add 5 teaspoons of cooking oil to it. Once the oil is hot, add the chopped capsicum and fry for 2 minutes.
• Transfer the capsicum to another bowl.
• Add 1 teaspoon of oil to the same pan and heat the oil. Add mustard to the oil once it is heated.
• Once the mustard stops sputtering, add chili powder, turmeric powder and garam masala powder to this and fry this well.
• Add the previously blended mixture of chopped onions, garlic, etc to the pan and cook over a low flame.
• Stir the mixture until the water in it evaporates and the gravy begins to get thick.
• Add the vegetables that were cooked in the cooker and cook for 1 minute.
• Add the fried capsicum and salt to taste.
• Add kasthuri methi and cumin seeds. Stir for 2 minutes and take the pan off the heat.
• Serve hot with rice or roti.

Ingredients:

• 2 Green Bell Peppers (Capsicum)

• 1 cup Mushrooms

• 3 Tomatoes

• ½ Onions (chopped)

• 3 Cloves

• 1 Cinnamon Stick ( medium sized)

• 1 tsp Ginger Garlic Paste

• ½ tsp Mustard Seeds

• 1 tsp Jeera (Cumin) Seeds

• 1 tsp Dhaniya (Coriander) Powder

• ½ tsp Garam Masala Powder

• 1 tbsp Yogurt

• Cilantro (Coriander) for garnishing

• Turmeric powder (Haldi)

• Chilli Powder ( as per the taste)

• Salt to taste


How to make Mushroom Capsicum Curry:

• Clean and wash the mushrooms. Once dried cut the mushrooms into half inch cubes.

• Cut the Bell peppers into cubes.

• Heat the oil in a pan. Add mustard seeds and once they pop out , add cumin seeds, onions, ginger garlic paste, cloves, cinnamon stick & stir them until the onions turn brown in color.

• Add the chopped tomatoes, turmeric powder & boil until tomatoes becomes soft.

• Add the bell peppers and yogurt stirring them thoroughly.

• Add dhaniya powder, garam masala powder and mix it well.

• Add mushrooms. Add some salt and chilly powder as you desire.

• Cook until mushrooms becomes soft.


Suggestions: Goes great with chapati and rice.

Ingredients:

• 3 sticks Baby Corn, sliced

• 1 Capsicum, chopped

• 1 Onion, chopped

• 1 Tomato, chopped

• 1 tsp Ginger-Garlic Paste

• 1 tsp Chili Powder

• ½ tsp Turmeric Powder

• 1 tsp Garam Masala Powder

• ½ tbsp Coriander Powder

• 3 spoon Grated Coconut

• 1 tsp Mustard Seeds

• 1 Urad Dal

• 4 Curry Leaves

• Salt, to taste

• Oil, as required


How to make Baby Corn Capsicum Curry:

• Pressure cook the baby corn pieces, after adding turmeric powder and little salt, for about 10 minutes or till it turns tender.

• When boiled, drain water out of it and keep it aside.

• Heat oil in a pan and put mustard seeds and urad dal in it.

• When the seeds start to crackle, add curry leaves, onion and capsicum in it and fry till onion becomes golden brown in color.

• Add tomatoes to it and fry till they become soft.

• Now, put ginger-garlic paste, chili powder, garam masala powder, coriander powder and salt in it and mix well again.

• Add cooked baby corn and fry again, for 2 minutes.

• Add water to this mixture and cook for about 5 minutes.

• In the meantime, prepare coconut milk by grinding grated coconut with water.

• Add the milk to baby corn gravy. Cook it for 5 more minutes and serve hot with chapattis.

Capsicum Pickle

Ingredients:
• 5 Capsicums
• 1/4 tsp Fenugreek seeds
• 1/2 tsp Mustard seeds
• Juice of 2 Lemons
• 1 tsp Chilli powder
• 1/2 tsp Turmeric powder
• Asfoetida powder
• 2 tbsp Oil
• Salt to taste
How to make Capsicum Pickle:

• Wash and cut the capsicum into small pieces. Remove the seeds

• Roast mustard seeds in a pan. When they start spluttering, add fenugreek seeds.
• After mustard and fenugreek seeds get roasted, grind them to make fine powder.
• Stir for a while and add asafoetida, chilli and turmeric powder. Stir again.
• Add capsicum pieces and salt. Stir and put the lid.
• Cook the mixture for few minutes till capsicum pieces are done.
• Occasionally open the lid 3-4 times. Stir and remove from the flame.
• Pour lemon juice and stir well.
• Capsicum Pickle is ready. Store it in a jar or bottle.

Cabbage and Capsicum Pulao

Ingredients:
• 1 Cup basmati rice, soaked in water
• 1 Capsicum, sliced
• 1/2 Cabbage, chopped lengthwise
• 1 Onion, sliced
• 1 tsp Ginger-garlic paste
• 1 tsp Green chili paste
• A pinch of Ajinomoto
• Salt to taste
• Oil for cooking
• Water

How to make Cabbage and Capsicum Pulao:


• Heat oil in the pan.

• Add sliced onion and cook till it becomes light brown.
• Add sliced capsicum to it and cook for 2 min.
• Then add chopped cabbage and cook again for a while
• Then add ginger-garlic paste, green chili paste and ajinomoto. Mix well
• Add the soaked rice in it and mix lightly, taking care that the rice don’t break.
• Add required quantity of water and cook till the rice is done.
• Cabbage and Capsicum Pulao is ready.
