Cauliflower Peas Masala

Cauliflower Peas Masala is a very popular Kerala recipe. Cauliflower Peas Masala is a semi gravy side dish. This is a good combination of vegetables with basic spices. It tastes good with Chapathi, Naan, Roti or any other Bread.




Ingredients :

Oil - 2 Tbsp
Cauliflower cut into florets - 1
Green Peas fresh or frozen - ¼ Cup
Cumin Seeds - 1 tsp
Ginger grated - 1 tsp
Garlic grated or paste - 1 tsp
Water - 400 ml
Salt to taste - 2
Coriander powder - 2 tsp
Red Chilli Powder - 1 tsp
Tomato Puree - 2 Tbsp
Garam Masala Powder - ½ tsp
Amchoor Powder/Dry Mango Powder - 1 tsp
Coriander Leaves chopped - a handful

Method:


  1. Heat Oil in a pan, add Cumin Seeds. Then add the Ginger, Garlic, Red Chilli Powder, Coriander Powder. Fry for few seconds.
  2. Then add the Cauliflower and Peas along with some Salt, Tomato Puree and water.
  3. Cover and cook until tender. Take care not to over cook as it might become paste.
  4. Then add the Garam Masala and Amchoor Powder. Mix well and take it off from heat.
  5. Garnish with Coriander Leaves / Cilantro.
  6. Serve hot with choice of your bread.

Prawn and Potato Curry

Prawn and Potato Curry is a tasty delightful recipe. 




Ingredients:

2 tbsp oil
1 large onion, sliced
2 cloves garlic, chopped
2cm ginger, chopped
3 large tomatoes, chopped
3 large kipfler potatoes, quarters
300g de-shelled prawns
3 tbsp curry powder
½ tsp cumin
½ tsp chilli powder
1 tsp paprika powder
1 tsp garam masala
1 tsp turmeric
1 can light coconut milk
Juice from half a lemon
2 sprigs coriander, chopped
1 cup water
salt to taste

 Method :


  1. Heat oil in a pan in medium heat. Fry prawns till cooked.
  2. Remove cooked prawns and keep aside.
  3. Add oil in pan and heat it. Fry cumin for 1 minute then fry garlic till aromatic.
  4. Fry onions till transparent.
  5. Add in ginger and mix.
  6. Add curry powder, chilli powder, paprika powder, garam masala and turmeric.
  7. Add coconut milk and one cup of water and blend the mixture well.
  8. Add salt to taste.
  9. Add cooked prawns, potatoes and tomatoes.
  10. Let the curry simmer for 15 minutes.
  11. Add lemon juice and allow mixture to simmer on low heat for at least an hour.
  12. Add coriander before serving.     

Tip: Cook the potatoes in the microwave for 5 minutes to ensure the potatoes were soft enough after they were mixed in the simmered curry. This short-cut method works for stem vegetables in gravy that is not simmered for long hours and ensures that the vegetables are cooked just right at the time of being served.

Ingredients:

• 1 cup Channa Dhal( Kadala Parupu)
• 1 cup Green Gram Dhal (Pasi Paruppu)
• 1 cup Red Gram Dhal
• 1cup Raw Rice
• 1 cup Idly Rice
• 2 Onions (chopped)
• 4- 8 Red Chilies
• 4 Garlic
• Few Curry leaves
• 3 strings Coriander Leaves
• ½ Fennel seeds(Saunf, Varyali)
• 1 tsp Cumin seeds (Seeragam)
• Salt and Oil to taste.
   
How to make Adai Dosa:


• Soak chana dal, green gram dal, red gram dal, raw rice and Idly rice all together for about 1 to 2 hours.
• Add the red chilies, curry leaves, coriander leaves, garlic, fennel seeds, cumin seeds to the soaked ingredients. Make a paste of these ingredients
• Ensure that the batter is ready.
• Cut the onions and half grind it in the mixer. Set them aside.
• Add salt and half ground the onion to the mixer.
• Make dosas in the usual way, using this batter.

Ingredients:

• 2 Eggs (boiled and halved) 
• ½ tsp Chili Powder 
• 2 tsp Coriander Powder 
• A pinch of Turmeric Powder 
• ¼ tsp Pepper Powder 
• ¼ tsp Garam Masala 
• 1 stem of Curry Leaves 
• Salt (to taste) 
• 3 tbsp Water 
• Vegetable Oil (for frying)

How to make Egg Fry:

• Combine chili powder, coriander powder, turmeric powder, pepper powder, salt, and curry leaves with some water in a bowl. Mix well to make a smooth paste.
• Cover the egg yolks wiht a thin layer of the paste.
• Heat oil in a pan and fry the eggs on low flame.
• Serve hot.

Apple Halwa

Apple Halwa is a very popular dish for Baisakhi and also an Indian dessert sweet recipe. Learn how to prepare Apple Halwa by following this easy recipe.




Ingredients:

• 2 Apples (grated) 
• ¼ cup Condensed Milk 
• 2 tbsp Sugar 
• ¼ tsp Cinnamon Powder 
• A pinch of Clove Powder 
• ¼ tsp Cardamom Powder 
• 2 tbsp Raisins 
• Ghee (as required)

How to make Apple Halwa:

• Grease a pan with ghee and fry the raisins. Remove and keep to the side.
• Combine apples, cinnamon powder, clove powder, and cardamom powder in the same pan. Cook, stirring continuously, on low flame.
• Add sugar and condensed milk. Stir on low flame until it thickens.
• Smear a plate with ghee and transfer the cooked halwa into it.
• Flatten it gently and top up with fried raisins. Let it cool.
• Slice into preferred shapes.
• Serve thereafter.

Ingredients:
• 1 cup Moong Dal 
• 1 cup Urad Dal 
• ¼ cup Rice 
• ½ tsp Mustard Seeds 
• ½ tsp Gram Dal 
• 1” piece Ginger (chopped) 
• Few Curry Leaves (chopped) 
• 2 Green Chillies (chopped) 
• ½ tsp Cumin Seeds 
• Cashew Nuts 
• Salt to taste

How to make Dal Idli:
• Keep together rice, moong dal and urad dal in water for 4 hrs. Then grind it and keep it aside for 6 hrs to get it fluffy.
• Heat ghee in a pan and little fry mustard seeds, cumin seeds, gram dal, cashew nuts,ginger. Mix in the batter with curry leaves and chillies.
• Pour the batter into idli stand and steam it.
• Serve it hot.

Ingredients:
• 1 cup Rice 
• 1 liter Milk 
• 4 Cashew Nuts 
• 4 Raisins 
• 4 Almonds 
• 2 Cardamoms (powdered) 
• 8 tbsp Sugar 
• 2 tbsp Ghee

How to make Rice Payasam:
Heat ghee in a pan and gently fry the rice. Remove and keep to the side.
Put little ghee in the same pan and fry cashew nuts, almonds, and raisins lightly.
Mix in the fried rice, sugar, and cardamom.
Pour milk and simmer on low flame until rice turns tender.
Serve hot.

Ingredients:
• 4 Tomatoes (finely chopped) 
• 1 whole Chicken (chopped) 
• 10 Red Chilies (finely grinned) 
• ½ tsp Pepper Powder 
• ½ tsp Turmeric Powder 
• ½ tsp Fennel Seeds (finely grinned) 
• 2 tsp Ginger Paste 
• 50 gm Garlic Paste 
• 5 Cloves (crushed) 
• 1 Cinnamon Stick (crushed) 
• 100 gm Shallot (chopped in cube) 
• 5 Green Chilies (slit in the middle) 
• 1 strand Curry Leaves 
• Oil 
• Salt to taste

How to make Kerala Chicken Masala:
• Take a heavy bottom saucepan and place it at a medium heat then pour oil into it.
• Add the green chilies and fry it for a minute.
• To it now add turmeric, fennel, red chili, cloves, ginger, garlic and cinnamon.
• Stir fry for five minutes or when it smells aromatic.
• Mix the shallot and stir for three minutes then add the tomatoes with salt.
• For seven minutes stir it fry then add the chicken pieces.
• Pour water after stirring it for ten minutes then lower the flame and tight seal the saucepan.
• Fifteen minutes later open the lid and stir the chicken then cover it for another ten minutes or when it is tender.
• Turn off the flame when the meat is cooked and appears dry.

Suggestions:
Best serve it with roti, pulao, veg-briyani or rice.

• 8 Tiger Prawns (de-shelled)

• 1 cup Rice (cooked)

• 100 g Unsalted Butter

• 2 Green Chilies (chopped)

• Salt (to taste)

• 5 cloves Garlic (peeled and crushed)


How to make Prawns with Rice:

• Combine butter, coriander leaves, green chilies, garlic, and salt in a baking pan. Bake for a minute in the oven.

• Roast the prawns in a non-stick pan and mix in the butter mixture. Toss to coat the prawns well.

• Spread rice in a serving plate.

• Place the buttered prawns over the rice and serve.

• 250 g Beans (chopped)

• 1 cup grated Coconut

• 3 Red Chilies

• Few Curry Leaves


How to make Beans Fry:

• Toss beans with salt and turmeric in a bowl.

• Transfer the beans into a pan filled with water and cook until tender. Drain the beans and keep aside.

• Heat oil in a pan and sauté red chilies, black gram, and asafoetida.

• Stir in beans and cook for around 2 minutes.

• Add coconut and curry leaves. Mix well.

• Serve hot.

Black Pepper Rasam

Ingredients:


• 3 cups Water

• 1 small lemon-size Tamarind

• 1 medium-size Tomato

• Salt to taste

• Oil for seasoning

• 1 tsp Mustard Seeds

• 1 tsp Fenugreek Seeds

• 2 red Chillies (halved)

• a Pinch Asafoetida

• 1 small bunch Fresh Coriander Leaves

• Curry Leaves

• 1 tsp Turmeric Powder

For Rasam Powder

• 1 tsp Black Pepper

• 2 tsp Dry Coriander Seeds

• 1 1/2 tsp Cumin Seeds

• 2 tsp Red Gram

• 1 Red Chili


How to make Black Pepper Rasam:

• Grind rasam powder with all the ingredients.

• Take a sauce pan, heat oil in it for 2 mins. Put mustard seeds, fenugreek seeds, Asafoetida and red chillies in oil. Fry till mustard splutters then add water to it. Add tamarind and salt.

• Add chopped tomato, fresh coriander leaves, curry leaves, turmeric, and 2 tsp rasam powder to it.

• Allow it boil thoroughly (about 8 mins). Remove from the flame and serve hot with rice.

Onam Special Recipe..
Appam is a popular breakfast recipe of Kerala. Learn how to make/prepare Appam by following this easy recipe.



Ingredients:


• 1/2 cup Cooked Rice

• 1/2 kg Raw Rice

• 1 Coconut (grated)

• 2-1/2 cup Water

• 3 tsp Sugar

• 1/2 tsp Yeast

• Salt to taste


How to make Appam:

• Soak raw rice for about 4 hours and drain.

• Blend with cooked rice and grated coconut in a mixie.

• Mix sugar, yeast and salt in boiled water. Leave it for half an hour.

• Add this mixture to the above grinded mixture.

• Leave the mixture for fermentation for 8 hours.

• Spread this fermented mixture in a non-stick pan.

• Put a lid on the pan and heat it for 2 minutes.

• Appam is ready. Serve it with potato curry.

Ingredients:


• 3/4 kg Vegetables (drumsticks, brinjals, yam, string beans, raw banana, ash gourd, ridge gourd)

• 1 tbsp Tamarind paste

• 1/2 tsp Turmeric powder

• 1/2 tsp Red chilli powder

• 6 to 8 Green chillies

• 1 Cup grated coconut

• 2 tbsp Oil

• 5 to 6 Curry leaves


How to make Avial:

• Wash, peel and cube the vegetables.

• Slightly cook drum sticks with salt.

• Grind the coconut to form a fine paste.

• Boil water in a skillet and add cubed vegetables.

• Mix red chilli and turmeric powder with it.

• Cook the vegetables properly.

• Add green chillies, salt, tamarind extract and coconut paste. Stir it.

• Now cook over low heat for about 15 minutes.

• Take a small pan and heat oil.

• Add the curry leaves to it.

• Fry until the leaves change color.

• Now pour over the cooked vegetables.

Ingredients:



• 3 cups Basmati Rice


• 500 gm Fish


• 1 Onions large (finely sliced)


• 2 small Tomatoes (finely chopped)


• ½ bunch Coriander (finely chopped)


• 1 tbsp Cardamom Powder


• 1 tbsp Red Chili Powder


• 1 tsp Hot Spice (Garam Masala)


• 4 Peppers (crushed)


• 3 Cinnamon Sticks (crushed)


• 4 Cloves (crushed)


• 3 Onions (finely grinned)


• 3 Green Chilies (finely grinned)


• 1/2tsp Turmeric


• 2tbsp Ginger Garlic Paste


• 2 tsp Yogurt


• 59 ml thick Coconut Milk


• Water (as required)


• 2tbsp Ghee


• 240 ml oil


• Salt to taste

How to make Kerala Fish Biryani:


• For 1 hour marinate the fish pieces with turmeric and salt mixture then leave it in the fridge.


• Wash clean the rice in a container and put it aside draining out the water.


• Take a heavy bottomed saucepan over a medium heated stove and pour ghee into it.


• Add the cinnamon, cloves, cardamom and pepper then stir it for two minutes.


• Splash the onion and fry it golden brown then add the rice.


• Remove the saucepan and place a large pan over a medium heat stove.


• Lay the fish pieces gently over the pan and fry it golden brown then put it aside.


• Add more oil if required to fry the onion slices golden brown.


• Mix to it one by one the garlic, ginger, tomato and chili paste then stir it for a minute.


• Pour the curd and coconut milk then stir for a minute with addition of salt.


• Sprinkle the coriander leaves and lower the then allow it to get cooked.


• To a large thick bottomed saucepan shift the rice evenly then the layer of fish mixture and pour 2tbsp ghee over it.


• Lower the stove’s flame and tight seal the lid of the saucepan then cook it for ten minutes.


Suggestions:

Best serve it with raita and curd.

• 1 kg Prawns

• 6 Onions (cut into rings)

• 1½ inch piece of Ginger (chopped)

• 5 Garlic Cloves (chopped)

• 4 tsp Kashmiri Chilly Powder

• 4 tsp Red Chilly Powder

• 4 Green Chilies (chopped)

• ½ tsp Turmeric Powder

• Salt (to taste)

• Coconut Oil (as required)


How to make Prawns With Tomato:

• Mix prawns, red chilly powder, turmeric powder, little water, and salt together in a large bowl. Marinate in the fridge for 30 minutes.

• Heat little oil in a pan and gently fry the prawns. Remove and keep aside.

• Heat 2 tbsp of oil in the same pan and fry ginger and garlic for a minute.

• Stir in green chilies, curry leaves, and onions. Fry until the onions turn brown.

• Add in kashmiri chilly powder, tomatoes, and fried prawns. Cover and cook for 10 minutes on low flame.

• Serve hot with fried rice.

• Peel and grind them into a paste.

• Pour milk in a pan and Bring to a boil.

• Stir in almond paste, sugar, honey, and cardamoms.
