Rice Payasam

Rice Payasam is a very popular recipe. Learn how to prepare Rice Payasam by following this easy recipe.


Ingredients:
• 1 cup Rice 
• 1 liter Milk 
• 4 Cashew Nuts 
• 4 Raisins 
• 4 Almonds 
• 2 Cardamoms (powdered) 
• 8 tbsp Sugar 
• 2 tbsp Ghee

How to make Rice Payasam:
Heat ghee in a pan and gently fry the rice. Remove and keep to the side.
Put little ghee in the same pan and fry cashew nuts, almonds, and raisins lightly.
Mix in the fried rice, sugar, and cardamom.
Pour milk and simmer on low flame until rice turns tender.
Serve hot.

Lychee Kheer

Lychee Kheer is a tasty rice pudding with the flavor of tasty lychees. Learn how to make/prepare Lychee Kheer by following this easy recipe.





Ingredients:


• 300 g Lychees (roughly chopped)

• 2 tbsp Basmati Rice (soaked and coarsely ground)

• 5 cups Milk

• 1/2 cup Sugar

• 3 tbsp Mawa (khoya) (grated)

• 1/2 tsp Green Cardamom Powder

• 12 Almonds (blanched and slivered)

• 12 Pistachios (blanched and slivered)

• A few drops Rose water


How to make Lychee Kheer:

• In a thick-bottomed pan, take the milk and bring it to a boil stirring all the while so that cream doesn’t form on the top.

• Add the coarsely ground rice to the milk and cook till done.

• Now add khoya, sugar and chopped lychees and stir for two minutes.

• Add green cardamom powder and rose water and mix well and remove the kheer from heat.

• Allow it to cool and serve garnished with almonds and pistachios.

Orange Kheer

Orange Kheer, also known as Kamla Kheer is a traditional Bengali recipe. Learn how to make/prepare Orange Khir by following this easy recipe.


Ingredients:


• 2 Oranges

• 1 Litre milk

• 150 gms Sugar

• 1/2 tsp Kesar


How to make Orange Kheer:

• Peel off the skin of oranges.

• Remove the inner transparent skin also.

• Boil the milk in a kadhai.

• Continue boiling the milk and stir it periodically till it thickens.

• Add sugar into the milk.

• Continue boiling the milk till the color changes.

• Remove the milk from the fire. Cool it for 5 minutes.

• Now mix orange chunks and kesar to it.

• Cool the kheer for at least 2 hours.

• Orange Kheer is ready to serve.

Badam Kheer

Badam Kheer is a very popular recipe. It does not take a lot of time.........and it is good to serve during festivals and get togethers. Learn how to make/prepare Badam Kheer by following this easy recipe.



Ingredients:

• 1 Cup Almonds(badam)

• 6 Cups Milk

• 1 Cup Sugar

• 1/2 tsp Saffron Strands

• 2 Cup Water


How to make Badam Kheer:

• Soak badams in a hot water for about an hour.

• Drain the water, peel off the skin of almonds and make a fine paste in a grinder using milk if necessary.

• Cook badam paste for about 5 to10 minutes in a heated pan over low flame and stir it continuously.

• Add sugar and keep stirring the mixture.

• Pour the remaining milk and boil it for about 15 minutes.

• Garnish it with a few saffron strands and serve.


Suggestion: This can be served hot or cold.....it tastes good either way!

Aravana Payasam is a very famous recipe. Aravana Payasam is often offered as a prasadam to the Gods in temples down south. It has a very auspicious note to it. Learn how to make Aravana Payasam by following this easy recipe.




Ingredients:

• 4 cup Jaggery
• 1 tsp Cardamom Powder
• 1 Raisins(Dried Grapes)
• 10 Cashew
• 2 cup(473ml) Rice
• 1 cup (237 ml) Ghee

How to make Aravana Payasam:

• Wash rice and fry in ghee.
• Cook the rice by adding water.
• Add 1/2 cup of ghee to the rice and blend it on low flame.
• Put jaggery to the rice and cook for some time.
• Add rest of the ghee slowly on low flame so that rice, ghee, jaggery can mix well.
• Garnish with raisins.

Suggestions: Serve hot

Apple Kheer

Apple Kheer is a popular vrat recipe especially prepared on Mahashivaratri. Learn how to make/prepare Apple Khir by following this easy recipe.



Ingredients:
• 2 liter Whole Fat Milk
• 2 Cooking Apples (peeled & diced into small pieces)
• ½ cup Sugar
• ½ tsp Cardamom Powder
• 5 Almonds (thinly slivered)
• 5 Pistachios (thinly slivered)
• 15-20 Saffron Strands

How to make Apple Kheer:
• Take milk in a pan and heat until it is condensed to 2/3 in quantity.
• Put apples with sugar in a fresh pan and cook until apples are soft. Then drain the apples and also reserve the liquid.
• Add the reserved liquid to the milk and boil it for 5 min.
• Now, add apple with remaining ingredients except almonds & pistachios and cook it for 3-4 min.
• Sprinkle almonds and pistachios over it.
• Serve hot or chilled.


Tip of the day: To clean the surface of vegetables like potato, radish, sweetpotato, carrots, etc. use a separate plastic scrubber or toothbrush kept for the purpose. Hold under running water and scrub.

Pal Payasam

Ingredients:

• 4 cups Whole Milk

• 3 tbsp Sugar to taste
• ¼ cup Short/Medium Grained Rice
• 1 tsp Ghee
• 4-5 Raisins
• Pinch of Saffron
• 1-2 tbsp Nuts (1used Almonds, Pistachios and Cashews)
• ¼ tsp Cardamom Powder

How to make Pal Payasam:

• Heat ghee in a sauce pan
• Add chopped nuts along with raisins in the sauce pan. Set it aside when the raisins get plump and nuts turn reddish brown.
• Roast rice for 2-3 min in the same pan over low heat.
• Add milk to the pan now and let it come to boil over medium-high heat. Stir it occasionally so that the milk does not stick to the bottom.
• It is better to use a non-stick pan, to make sure that the milk does not burn.
• Once the milk is boiled add sugar to it and stir it. Reduce the heat to medium and cook until the milk has reduced to half.
• Once the rice gets cooked and becomes soft and when the milk becomes half, the Payasam is done.
• Add the rest of the ingredients and stir gently till the ingredients combine and then serve it garnished with the remaining nuts.

Sweet Potato Kheer

Ingredients:

• 1 Medium sweet potato
• 1 Litre milk
• 1/3 Cup sugar
• 1/4 tsp Cardamom powder
• 1 tsp Raisins
• 1 tsp Almonds, slivered
• 1 tsp Pista (pistachios), slivered
• 1 tbsp Fine vermicelli
• 1 tsp Refined oil

How to make Sweet Potato Kheer:

• Steam the potato in a pressure cooker till 3 to 4 whistles.

• Peel off the skin of steamed potato and grate with a grater.
• Take oil in a thick bottomed pan and warm it.
• Add vermicelli and stir-fry until light golden.
• Drain the fried vermicelli and keep it aside.
• Pour milk in a deep pan and boil well for 7 to 8 minutes.
• Now add sweet grated potato, cardamom powder and sugar.
• Stir well until sugar gets dissolved.
• Then add remaining ingredients and simmer for 2 minutes.
• Take off heat and serve it hot.

Suggestions:

Be sure to add potatoes in milk just few minutes before serving.

Aval Payasam:

Ingredients:
• 1/4 Cup poha (flattened rice)
• 1 Litre whole cream milk
• 5 Almonds, thinly slivered
• 5 Pistachios thinly slivered
• 5 Pinches cardamom powder
• 1 Cup sugar
• 4 Cashews, broken
• 15 Raisins

How to make Aval Payasam:
• Wash and drain the poha. Leave it aside for 10 minutes.
• Separate poha grains with your finger.
• Boil the milk in a large vessel.
• When milk starts boiling, add poha and stir gently.
• Bring to boil again.
• Simmer till milk volume reduces to half. Stir occasionally.
• Now add sugar and cardamom. Stir to dissolve.
• Add raisins and cashews. Simmer for 2 more minutes.
• Garnish with chopped almonds and pistachios.
• Aval Payasam is ready.

CARROT KHEER

Ingredients:

• 6-8 Fresh carrots

• 1 Litre full cream milk
• 2 Cups sugar
• 1/2 tsp Cardamom powder
• 1/4 tsp Saffron
• 5-6 Sliced almonds
• Some cashews

How to make Carrot Kheer:


• Wash the carrots and cut the edges.
• Cut the carrots into small pieces and boil it in a pressure cooker.
• In the meantime, boil the milk in a big vessel and leave it on very low heat.
• Place the boiled carrot & saffron into a grinder and make paste of it.
• Then add the carrot paste into boiling milk and keep it on normal heat.
• Stir the mixture continuously and add sugar (add additional sugar as per the taste).
• Add cardamom powder and stir well.
• Heat the mixture until boiling state.
• Now let it cool for sometime.
• Refrigerate it for cold serving.
• Decorate with cashews and sliced almonds before serving.

Suggestions:

Serve it cold or hot as per choice.
