Spinach & Tomato Rice

Spinach & Tomato Rice is a Greek dinner recipe.


Ingredients:

• 2 Pounds fresh spinach 
• 2 Cups olive oil 
• 1 Large onion, minced 
• 2 Sprigs fresh mint 
• 2 tbsp Tomato paste 
• 1 Cup uncooked rice 
• 2-1/2 Cups water 
• Sea salt 
• Freshly ground pepper 
• 1 Lemon, cut in wedges

Method:

  1. Wash the spinach, chop and set aside to drain.
  2. Preheat a heavy-bottomed pot on low heat.
  3. Put olive oil in the pot and increase the heat to medium. Add onion and sauté till it is translucent.
  4. Add fresh mint and spinach. Sauté for 5 minutes, until wilted.
  5. Dilute the tomato paste in the water and add to the pot, with salt and pepper to taste.
  6. Increase heat and bring the mixture to a boil.
  7. Add rice, stir, and cover.
  8. Reduce heat and allow to simmer for 20 minutes or until the water has been absorbed.
  9. Do not stir during simmering.
  10. Serve with lemon wedges.
  11. Spinach & Tomato Rice is ready.

Ingredients:

• 330 gm Tomatoes (peeled, de-seeded and chopped) 
• 3 tbsp Red Wine Vinegar 
• 1 Spring Onion (minced) 
• 250 gm Asparagus 
• 1 tbsp Olive Oil 
• 2 tsp Sugar 
• 1/4 tsp Salt 
• 1 tbsp Water 

How to make Asparagus and Tomato:

Discard the tough ends of Asparagus and cut them into 3-inch pieces.
Add water, vinegar, salt and sugar to a pan and bring it to boil over medium heat. Keep it aside.
Now heat the oil in a heavy nonstick skillet over medium flame.
Add in asparagus and saute for 3 minutes. Add the spring onions and chopped tomato pieces.
Now add the water, vinegar, sugar, salt mixture to it, stir properly and cover the skillet.
Simmer for another 5 minutes.
Add pepper to taste and serve hot.

Ingredients:
• 1 kg Firm Red Tomatoes (washed and cubed) 
• 10 Green Chilies 
• 6 tbsp Sesame Oil 
• 2 tsp Cumin Seeds 
• 2 tsp Fenugreek Seeds 
• 2 Tamarinds (soaked in a little hot water to soften) 
• 2 tsp Mustard Seeds 
• 1/2 tsp Asafetida 
• Salt to taste

How to make Andhra Tomato Pickle:
• Heat 3 tbsp of sesame oil in deep pan and add tomatoes.
• Fry it until they are soft and then mash the tomatoes.
• Add to the mashed tomato paste on the Grind the tamarind and green chilies.
• On the other hand heat 3 tbsp of sesame oil and mustard seeds in another pan.
• When they are splitting add the fenugreek seeds asafetida and fry it
• Turn off the fire and put the pan on one side
• Add the hot mix onto the tomato-tamarind-green chili paste and stir well.
• Allow to cool it automatically

Ingredients:


• 2 Tomatoes (medium sized)

• 11/2 tsp Mustard Seeds

• 1 tsp Urud Dal

• 1pinch Asafetida

• 3 Dry Red Chilies

• 1 tbsp Tamarind (Extracted)


How to make Andhra Tomato Rasam:

• Grind the tomatoes and make it a fine paste.

• Take a bowl with 250 ml of water and add tamarind and squeeze it well.

• Add tomato paste to it and keep the mixture aside.

• Heat oil and add mustard seeds, when it splutters add urad dal, a pinch of asafetida, red Chilies.

• Add the mixture to it.

• Bring it to boil.


Suggestions:

Serve it with rice.

Ingredients:

• 4 medium Carrots

• 6 medium Tomatoes

• 2 tbsp Lemon Juice

• ½ stalk Celery (Chopped)

• Ice cubes as required

• Salt to taste


How to make Carrot And Tomato Smoothie:

• Cut the carrots into ½ inch cubes and tomatoes into quarters and freeze them for some time.

• Put the frozen tomato cubes in a blender and blend it until smooth. Add the frozen carrots and blend again.

• Add the ice cubes, fresh lemon juice and blend together again. Serve it in a stemmed glass chilled.

• 16 Toast Fingers


• 1 pinch Pepper


• 14 tbsp Olive Oil

• 1 tbsp Flat-Leaf Parsley (minced)


• 1 pinch Superfine Sugar


• 1 pinch Salt


• ½ cup Butter


• 4 large Eggs

• Preheat the olive oil in a skillet.


• Add tomatoes and cook for about 5 minutes.


• Add parsley, garlic, sugar, a pinch of salt and pepper.


• Blend the mixture and set it aside.


• Put butter in 4 ramekins and spoon tomato sauce evenly among them.


• Break an egg into each ramekin and cook for about 15 minutes.


• Garnish it with basil leaves and serve with toast fingers.

Ingredients:



• 6 Tomatoes.


• 2 Cups Basmati Rice


• 1 Onion (medium sized)


• 5 Green Chilies.


• 1 Potato


• A handful of Green Peas


• Ginger and Garlic Paste


• 12-15 Curry Leaves


• 1 tsp Cardamom Seeds


• 3 Bay leaves


• 2 tbsp Oil


• 1 tsp Cinnamon Powder


• 4 Cloves


• 1 tsp Turmeric


• Salt (to taste)




How to make Andhra tomato Rice:


• Wash the basmati rice and soak it for 30 minutes. Meanwhile chop all the vegetables into small pieces.


• Now take one pan and heat the oil and add all the spices, fry them of 5 minutes.


• Add the chopped vegetables.


• Cook it until the vegetables become soft.


• Now add soaked basmati rice after draining water. Mix it well for 5-10 minutes.


• Add the contents into rice cooker, add salt and cook it in a medium flames for 2 whistles.


• Now tomato rice is ready to serve.



Suggestions:


Serve with curd or raitha

Ingredients:

• ½ kg Fava Beans (shelled)

• 6 large Ripe Tomatoes (peeled, seeded and chopped)

• 2 cloves Garlic (finely chopped)

• 1½ tsp Paprika

• 1 tsp Cumin Seeds (Jeera)

• Salt (to taste)

• ¼ tsp Black Pepper

• 1/8 tsp Hot Pepper (ground)

• 1/3 cup Olive Oil

• ¼ cup Coriander Leaves (chopped)


How to make Beans in Tomato Sauce:

• Take fava beans, along with 2 cups of salted water in a saucepan and get it to boil on high flame. • Reduce the flame to medium and cook the beans for 25 minutes, or until tender.

• Remove and drain well.

• Put tomatoes with remaining ingredients in a pan and mix well.

• Cook on medium to high flame, crushing the tomatoes and stirring infrequently, for 20 minutes, or until the sauce thickens.

• Pour the cooked beans, along with 2 tbsp water and blend well.

• Cook for the final 5 minutes.

• Serve hot with bread.

Chettinad Tomato Kuzhambu is a very delicious tomato curry from the Chettinad cuisine and it take 20 min to prepare & 20 min to cook. Learn how to prepare Chettinad Tomato Kuzhambu by following this easy recipe.


Ingredients:
• 1 cup Tamarind juice
• 4 Tomatoes (1 chopped)
• 5 Red Chilies
• ½ tsp Cumin Seeds
• ½ tsp Fenugreek Seeds
• 1 Onion
• 5 flakes Garlic
• 2 tsp Coriander Seeds
• 6 Cashew Nuts
• 2 tbsp Coriander Leaves, chopped (to garnish)
• Oil, as required
• Salt, to taste

How to make Chettinad Tomato Kuzhambu:
• Take a pan, heat oil in it and then fry tomatoes (leaving one) in it for 3 minutes. Grind the tomatoes and keep it aside.
• Now, heat the pan with oil and put cumin seeds, fenugreek seeds, coconut, red chili and coriander seeds in it and fry.
• Now, add ½ chopped onion, garlic and cashew nuts and fry it again.
• Grind these fried ingredients with water to make paste.
• Heat the pan again and put remaining onion and tomato in it and fry it till onion is golden in color.
• Add grinded onion- cashew nut paste in it and fry for 5 minutes.
• Now, put ground tomato in it and cook till the oil starts to separate.
• Put tamarind juice and salt in it and cook it on medium heat for around 4 minutes. Garnish with chopped coriander leaves and serve with lunch.

• 1 Cabbage (chopped in to small pieces)

• 1 Onion (finely chopped)

• 1 tsp Cumin Seeds (jeera)

• Heat the frying pan and add one tablespoon oil into it.

• Toss Jeera seeds, mustard seeds, ginger garlic paste, turmeric.

• When they splutter add the chopped onions and let them fry well.

• Add cabbage to it and fry it nicely.

• Add Water if required and let it cook well.

• Add the tomato into the pan and mix well.

• sprinkle jeera-coriander powder and salt to it.

• Leave it, to cook for a while.

• Garnish this with coriander.


Suggestions: serve it hot with rice/roti

Tomato Pitla Gravy

Ingredients:

• 100 g Kabuli Channa (White Gram)
• 250 g Tomato
• Turmeric Powder (pinch)
• Asafetida (a pinch)
• Tamarind Paste (little)
• 1 cup Coconut (grated)
• 7 red Chilies
• 2 tsp Coriander Seeds
• 2 tsp Bengal Gram Dal
• Salt to taste
• For Seasoning:
• 1 tsp Mustard Seeds
• 1 tsp Oil
• Curry Leaves (few)
• Coriander Leaves (garnishing)

How to make Tomato Pitla Gravy:


• Soak Kabuli channa overnight in water.

• Heat a 1 tsp of oil; add coriander seeds, red chilies, and Bengal gram dal. Fry them till they turn golden brown.
• Deep fry grated coconut separately.
• Grind the fried ingredients to make a smooth paste.
• Chop tomatoes finely. Take a pan add tomatoes; add water, turmeric powder, tamarind paste, asafetida, and salt.
• Cook them on medium heat for 5 minutes.
• Mix the ground paste to tomatoes and cook them for 7 minutes, stirring occasionally.
• Boil the Kabuli channa and keep ready. Mix the cooked channa to the gravy and cook it for 5 more minutes.

For Seasoning:

• Heat 1 tsp of oil. Add mustard seeds, curry leaves and allow it to splutter.
• Add this seasoning to the gravy.
• Garnish it with coriander leaves.

Suggestions:

Serve with pooris, dosas, and parathas.

Tomato Coconut Shorba

Ingredients:

• 900 g Tomatoes

• 225 g Carrots
• 2 Onions
• 4 to 5 Garlic Cloves (optional)
• 1 tbsp Butter
• 5 tbsp Grated Fresh Coconut
• 2 cups White Sauce
• 3 cups Water
• Salt (to taste)
• Pepper (to taste)
• Bread Croutons (to serve)

How to make Tomato Coconut Shorba:

• Wash tomatoes and cut them into big pieces. Take carrots and grate them.

• Chop onions into small pieces and crush garlic.
• Take a saucepan, put oil in it and let it melt.
• Add onions to the pan, along with garlic, and fry for 2 minutes.
• Now add tomatoes, carrots, 3 cups of water and grated coconut. Keep on boiling it, till it is cooked.
• Using the hand blender, blend the mixture and strain the soup. Add salt and boil for 10-15 minutes.
• Add the white sauce and pepper and mix well.
• Serve hot with bread croutons.

TOMATO SOUP

Ingredients:

• 4 Ripe Tomatoes


• Salt to taste


• Pepper


• Mint leaves


• Butter

How to make Tomato Soup:

•Put the tomatoes in boiling water for 2 min.

•Then immediately transfer them to ice-cold water.

•Peel the skins and cut the tomatoes into small pieces.

•Now take water in a pan, boil it and add the chopped tomatoes.

•Add mint and salt to the boiling mixture. Boil for about 5-6 minutes.

•Cool and blend the tomatoes with the help of a mixer.

•Sieve the blended mixture to discard the seeds.

•Garnish it with a dash of butter and serve hot.
