Boondi Aur Makai Ki Bhel

Boondi Aur Makai Ki Bhel is a tasty and interesting variation of the mouth watering bhel. Learn how to prepare Boondi Aur Makai Ki Bhel by following this easy recipe.  




Ingredients:

• 2 cups Spicy Boondi
• 2 cups Corn kernels (boiled)
• 1 large Cucumber (seeded and chopped)
• 1 large Tomato (seeded and chopped)
• 1 large Onion (chopped)
• 1Green Chilli (chopped)
• 4 tbsp Fresh Coriander Leaves (chopped)
• 1/2 cup Roasted Peanuts (peeled)
• 1 tbsp Lemon juice
• Chaat Masala to taste
• 1/4 cup Sweet Tamarind Chutney
   
How to make Boondi Aur Makai Ki Bhel:


• Take a big clean bowl and toss in the onion, cucumber, tomato, and green chilli together.
• Add boondi, corn, roasted peanuts, coriander leaves, lemon juice, chaat masala and tamarind chutney.
• Mix well and serve.

Bajra Roti

Bajra Roti is a delicious flour bread made of millet. Learn how to make/prepare Bajra Roti by following this easy recipe.




Ingredients:


• 5 cup Millet flour

• A pinch Salt

• 6 - 7 tbsp Ghee

• Warm Water


How to make Bajra Roti:

• Sieve the millet flour and add salt to it.

• Gradually add enough warm water and knead with greased palms to make a semi-soft dough.

• Knead the dough 5 minutes before making the roti.

• Divide the dough equally into lemon-sized portions.

• Flatten each portion with palms pressing the edges together to make 5 - 6 inch diameter discs.

• Heat a griddle at high flame and put a roti on it and roast both sides.

• Then put it directly on a coal fire to make it crisp.

• Smear 2 tbsp ghee on it, crumple lightly between both palms and serve hot. Repeat with the other rotis.

• Serve immediately with yoghurt or garlic chutney.

Banjari Gosht

Banjari Gosht is one of the favorite recipes from Rajasthan. Learn how to make/prepare Banjari Gosht by following this easy recipe.





Ingredients:


• 600 g Mutton (cleaned and cut)

• 150 g Oil

• 200 g Onions (sliced)

• 50 g Whole Garam Masala

• 80 g Ginger-Garlic Paste

• 25 g Red Chili Powder

• 15 g Turmeric Powder

• 20 g Coriander Powder

• 15 g Coriander Seeds

• 150 g Yoghurt

• 6 Red Chilies (whole)

• Salt (to taste)


How to make Banjari Gosht:

• Place a large saucepan over heat and heat oil in it.

• Add the sliced onions and sauté until they turn golden brown.

• Add in the ginger-garlic paste, coriander powder, turmeric powder, red chili powder, salt and whole garam masala. Stir well.

• Now, add mutton and yoghurt and mix well.

• Roast and crush the coriander seeds and add to the mutton.

• Allow the mutton to cook.

• When the mutton turns soft, garnish it with whole red chilies and a few pounded coriander seeds.

• Serve hot.

Bikaneri Bhujia

Bikaneri Bhujia is a crispy snack, which can be stored in an air-tight container for a long time. Learn how to prepare Bikaneri Bhujiya by following this easy recipe.




Ingredients:



• 1/2 Cup bengal gram flour


• 1/2 Cup moath flour


• 1/4 tsp Cardamom powder


• 1/4 tsp Asafoetida


• 1-1/2 tsp Pepper powder


• 1 tsp Oil


• Salt to taste


• Oil for deep frying


• Water as needed


How to make Bikaneri Bhujia:


• Combine all the ingredients along with enough water and mix properly to form soft dough.


• Heat the oil in a kadhai.


• Place the dough in a sev mould, press and squeeze by hand through the sev and press into the hot oil.


• Deep fry bhujia on medium heat until it is lightly browned.


• Drain on absorbent paper.


• Repeat the same process until all the dough is used up.

Burnt Garlic And Mint Chutney is high on flavor and taste. Learn how to prepare Burnt Garlic And Mint Chutney by following this easy recipe.


Ingredients:



• 8-10 cloves of Garlic


• 2 cups Fresh Mint Leaves (torn)


• 1 tbsp Oil


• 1/2 tsp Black Salt (Kala Namak)


• 1 inch piece Ginger (roughly chopped)


• 2 Green chillies (roughly chopped)


• 1 1/2 cups Yogurt (whisked)


• 1 tbsp Lemon Juice


• Salt to taste

How to make Burnt Garlic And Mint Chutney:


• Take a pan and heat oil in it. Add garlic and sauté till light brown.


• Add black salt to the garlic and stir fry till the garlic is completely brown.


• In a mixer, take fresh mint leaves, ginger, green chilies and the sautéed garlic. Add 2 tbsp water and salt to it and grind into a smooth paste.


• Pour yogurt into the mixture and blend again.


• Now add some freshly squeezed lemon juice and salt to the paste.


• Sieve this mixture through a muslin cloth to get smooth paste.


• Serve chilled.

Jowar Roti is a popular recipe eaten in the summer month in Rajasthan. Learn how to prepare Jowar Roti by following this easy recipe.



Ingredients:



• 1 cup Jowar Flour


• 1 cup Warm Water


• Salt to taste


• 1 tbsp Ghee

How to make Jowar Roti:


• Mix the Jowar flour, warm water and salt to form smooth dough and leave it for 15-20 minutes.


• Knead well and divide it into equal portions.


• Roll out each portion into a roti and put it on a hot griddle over medium flame.


• Cook from both sides and then put it directly on the fire to puff up.


• Turn it over during puffing and put off the flame.


• Now smear a 1/8 tsp of ghee over the Jowar Roti. Serve hot.

Bajra Aloo Roti

Bajra Aloo Roti is a special Rajasthani dish generally eaten during the winter months. Learn how to make Bajra Aloo Roti by following this easy recipe.



Ingredients:
• 2 cups Millet Flour (bajre ka aata)
• ¼ cup Onions (finely chopped)
• ¾ cup Potatoes (boiled and mashed)
• 3-4 tbsp Fresh Coriander (finely chopped)
• 2 tsp Green Chilli and Ginger Paste
• 1 tsp Dry Mango Powder (amchur)
• ½ tsp Garam Masala Powder
• Salt to taste
• Ghee (as required)

How to make Bajra Aloo Roti:
• Mix all the ingredients together properly and then make a soft dough by adding warm water.
• Take little portion of the dough and make a round ball.
• Roll it out giving it a round shape.
• Now cook this roti in a hot tawa (griddle).
• The rotis are ready when both the sides turn golden brown.
• Enjoy the hot Bajra Aloo Rotis with desi ghee, aloo ki sabzi and kadhi.
