Chocolate Peanut Butter Cake

Chocolate Peanut Butter Cake is a delicious cake that can be prepared on any occasion. 



Ingredients :

2 cups all-purpose flour
2 1/2 cups sugar
3/4 cup unsweetened cocoa powder, preferably Dutch process
2 teaspoons baking soda
1 teaspoon salt
1 cup neutral vegetable oil, such as canola, soybean or vegetable blend
1 cup sour cream
1 1/2 cups water
2 tablespoons distilled white vinegar
1 teaspoon vanilla extract
2 eggs
1/2 cup chopped peanuts (I used honey roasted), optional

Method :

1. Preheat the oven to 350 degrees F. Butter the bottoms and sides of three 8-inch round cakepans. Line the bottom of each pan with a round of parchment or waxed paper and butter the paper.

2. Sift the flour, sugar, cocoa powder, baking soda, and salt into a large bowl. Whisk to combine them well. Add the oil and sour cream and whisk to blend. Gradually beat in the water. Blend in the vinegar and vanilla. Whisk in the eggs and beat until well blended. Scrape down the sides of the bowl and be sure the batter is well mixed. Divide among the 3 prepared cake pans.

3. Bake for 30 to 35 minutes, or until a cake tester or wooden toothpick inserted in the center comes out almost clean. Let cool in the pans for about 20 minutes. Invert onto wire racks, carefully peel off the paper liners, and let cool completely. (Deb note: These cakes are very, very soft. I found them a lot easier to work with after firming them up in the freezer for 30 minutes. They’ll defrost quickly once assembled. You’ll be glad you did this, trust me.)

4. To frost the cake, place one layer, flat side up, on a cake stand or large serving plate. Spread 2/3 cup cup of the Peanut Butter Frosting evenly over the top. Repeat with the next layer. Place the last layer on top and frost the top and sides of the cake with the remaining frosting. Once the cake is fully frosted, it helps to chill it again and let it firm up. The cooler and more set the peanut butter frosting is, the better drip effect you’ll get from the Chocolate-Peanut Butter Glaze.

5. To decorate with the Chocolate–Peanut Butter Glaze, put the cake plate on a large baking sheet to catch any drips. Simply pour the glaze over the top of the cake, and using an offset spatula, spread it evenly over the top just to the edges so that it runs down the sides of the cake in long drips. Decorate the top with chopped peanuts. Refrigerate, uncovered, for at least 30 minutes to allow the glaze and frosting to set completely. Remove about 1 hour before serving.

Peanut Butter Frosting
Makes about 5 cups

10 ounces cream cheese, at room temperature
1 stick (4 ounces) unsalted butter, at room temperature
5 cups confectioners’ sugar, sifted
2/3 cup smooth peanut butter, preferably a commercial brand (because oil doesn’t separate out)

1. In a large bowl with an electric mixer, beat the cream cheese and butter until light and fluffy. Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes.

2. Add the peanut butter and beat until thoroughly blended.

Chocolate-Peanut Butter Glaze
Makes about 1 1/2 cups

6 ounces seimsweet chocolate, coarsely chopped
3 tablespoons smooth peanut butter
2 tablespoons light corn syrup
1/2 cup half-and-half

1. In the top of d double boiler or in a bowl set over simmering water, combine the chocolate, peanut butter, and corn syrup. Cook, whisking often, until the chocolate is melted and the mixture is smooth.

2. Remove from the heat and whisk in the half-and-half, beating until smooth. Use while still warm.

• Add egg whites, one at a time, and beat after each addition.
• Stir in vanilla essence and continue whipping at low speed.
• Mix in flour and milk, one at a time, and whip until well blended.
• Pour the batter into the prepared pan.
• Bake for 35 minutes, until a toothpick inserted comes out clean.

• 1 cup Blueberries
• 1-1/3 cups All-Purpose Flour
• 1/2 cup Cornmeal
• 2 tsp Baking Powder

• 1/2 cup Sugar
• 1 Egg
• 2 tbsp Apple Sauce
• 1 cup Skim Milk

Topping


• 1 tbsp Skim Milk
• 1 cup Confectioners' Sugar
• 1 tsp Lemon Zest (grated)
   
How to make Blueberry Corn Muffins:


• Preheat oven to 375 Degree Celsius.
• Grease and flour a cupcake pan and toss the blueberries with flour.
• Mix together remaining flour, cornmeal, baking powder and salt in a blender.
• On medium-high speed, beat the 2 egg whites to stiff peaks.
• Beat in the extra egg and apple sauce. Alternately beat in flour mixture and 1 cup milk. Fold in blueberries.
• Put the mixture among the cupcake pan. Bake for 25 minutes, or until toothpick inserted comes out clean.
• Let the pan cool for 10 minutes. Remove muffins from the pan and put them on a cooling rack.
• For the topping, mix sugar, milk and lemon zest, and sprinkle completely over cooled muffins.
• Blueberry Corn Muffins are ready to serve.

How to make Beetroot Cake:

• Take a bowl and put cinnamon, flour, baking powder, and salt.
• Mix it well.
• Add oil, sugar into the mixture and beat it.
• Add beetroot, carrots, nuts, eggs yolks and mix it.
• Beat the egg whites until stiff.
• Fold the beaten egg whites into the mixture using a metal spoon.
• Pour the mixture into cake pan.
• Bake it in a preheated oven at 180°C for 1 hour until springy to the touch.

Suggestions: Serve chilled.

• Pour in the batter and bake for 35 minutes at 375 degrees F.

• Remove, top with ice cream and cool on wire rack.

• Slice and serve.

Ingredients:

• 4 beaten Eggs

• 2½ tsp Baking Powder

Almond Banana Cake

Ingredients:

• ½ cup Sugar

• 2 Eggs

• ½ tsp Baking Powder

• ¾ cup Banana Puree

• ½ cup sliced Almonds

• 250 g raw whole Almonds (toasted)

• 2 tbsp Lemon Juice

• Icing Sugar (to garnish)

• 2 tsp Vanilla Extract


How to make Almond Banana Cake:

• Preheat oven to 300 degrees F.

• Butter a heart-shaped flan tin and place a baking sheet on it.

• Grind whole almonds in a grinder, until finely powdered.

• Beat eggs with sugar until pale and fluffy.

• Add almond powder, banana puree, vanilla extract, and lemon juice. Mix until uniformly combined.

• Pour the mixture into the prepared tin and sprinkle with sliced almonds.

• Bake until golden brown and a toothpick inserted in the center comes out clean, for around 45 minutes.

• Cool and sprinkle with icing sugar.

• Serve thereafter.

Ingredients:

• 2/3 cup Sugar
• 5 Egg whites, room temperature
• 1 layer Sponge Cake
• 1 brick Chocolate, strawberry, and vanilla ice cream or other flavor (very firmly frozen)

How to make Baked Alaska:

• Beat egg whites in a bowl until foamy.

• Gradually add the sugar to egg whites and beat until meringue forms stiff peaks. Cut sponge cake 1 inch larger than the brick of ice cream.
• Spread meringue over the ice cream and the cake, taking care to seal completely so no ice cream is exposed.
• Sprinkle with flaked almonds and bake at 400° until meringue is light brown.
• Dust with icing sugar and serve immediately.

Ingredients:

• 2 cups Brown Sugar
• 3 cups All-Purpose Flour

• 1 tbsp Baking Soda

• 2 tbsp Ground Cinnamon

• 2 tbsp Ground Cloves
• 2 tbsp Ground Allspice
• 2 tbsp Ground Nutmeg
• 4 Eggs

• 2 tbsp Lemon Zest

• 2 tbsp Vanilla Extract
• 1 1/2 cups Raisins
• 1 1/2 cups Chopped Nuts
• 1 1/2 cups Dried Mixed Fruit

• 1 1/2 cups Butter, melted

How to make Fruit Cake:
• Firstly, preheat the oven to about 225 degree F.
• Now, in a large bowl, mix sugar, flour, soda, spices, eggs, lemon zest, vanilla, fruit, nuts and melted butter.

• Pour the mixture over a greased pan.
• Bake the mixture for about an hour or until a tester comes out clean.

• Cool it on a wire rack and wrap it in a foil.
