• 1 Egg (beaten)

• 2 Button Mushrooms (chopped)

• 1 tbsp Butter

• 3 small Onion (chopped)

• ¼ tsp White Pepper Powder

• A pinch of Mustard Powder

• Salt (to taste)

How to make Mushroom Omelette:

• Heat ½ tbsp butter in a pan and shallow fry the mushrooms. Remove and keep aside.

• Combine together egg, salt, pepper, onion, and mustard in a bowl and beat well.

• Heat ½ tbsp butter in a pan and pour the egg mixture, whirling the pan to spread it evenly.

• Top up with fried mushrooms. Fry on both sides.

• Serve hot

• Oil for frying

• Salt and pepper to taste

How to make Golden Fried Prawns:

• Wash and chop the prawns into pieces.

• Mix salt, wine, black pepper and prawns properly and leave this mixture for 20 minutes.

• Take a bowl and prepare a mixture of corn flour, white flour, egg whites, ajinomoto, baking powder, white pepper, water and oil.

• Stir it until the mixture thickens.

• Now dip the prawns in this mixture.

• Fry prawns properly.

• Golden fried prawn is ready.

• Cook till the mixture turns bubbly.

• Gradually add the milk.

• 2½ cups All-Purpose Flour
• 1 tsp Salt
• 1 cup Shortening
• ½ cup Milk
• 1 Egg (separated)
• 1 cup Cornflakes (crushed)
• 6 medium Tart Apples (peeled and thinly sliced)
• 1 cup Sugar
• 1½ tsp Cinnamon (ground)
• Additional Sugar (as required)
• ½ cup Confectioners' Sugar
• ¼ tsp Vanilla Extract
• 2 tsp Hot Water

How to make Danish Apple Pizza:
• Mix together flour and salt in a large mixing bowl.
• Add in shortening and mix till you get coarse crumbs.
• Combine milk and egg yolk in a separate bowl. Mix well.
• Add the milk mixture to the crumbs gradually. Mix to forma soft dough.
• Cover the dough and refrigerate for at least 1 hour.
• Flour a flat surface lightly.
• Roll half of the dough to fit a 13-inch pizza pan.
• Sprinkle cornflakes over the dough.
• Spread the apples.
• Mix sugar and cinnamon together. Sprinkle over the apples.
• Roll out the other half dough to fit the top of the pie.
• Place the dough over the apples.
• Make slits on the top.
• Seal the pastry and flute the edges, if you desire.
• Brush the pastry with egg white.
• Sprinkle additional sugar, if required.
• Bake the pie at 350 °F (175 °C) for 40 to 45 minutes till it turns golden brown.
• To prepare the glaze, mix confectioners’ sugar, vanilla extract and hot water to form the desired consistency.
• Drizzle the glaze over the baked pizza

• ½ kg Chicken (pieces)

• 1 tsp Ginger Paste

• 1 tsp Garlic Paste

• ½ tsp Garam Masala Powder

• ½ tsp Red Chili Powder

• ¼ tsp Coriander Powder

• ¼ tsp Turmeric Powder

• 1 Onion (chopped)

• 2 Tomatoes (chopped)

• 2 Green Chilies (slit opened)

• 1 cup Toor Dal (cooked)

• ½ tsp Mustard seeds + Urad Dal

• 2 Dry Red Chilies

• 1 tsp Lemon Juice

• 5 Curry Leaves

• 2 tbsp Coriander Leaves (chopped)

• Salt

• Oil

How to make Chettinad Chicken Sambar:

• Marinate the chicken with red chili powder, turmeric powder, coriander powder, garam masala and enough salt. Keep aside.

• Heat oil in a pan and add mustard seeds, urad dal and dry red chilies and fry them.

• Add chopped onions, chopped tomatoes; curry leaves green chilies, and ginger and garlic paste. • Stir until the onions turn translucent.

• Add the marinated chicken pieces and cook until the chicken changes its color and the raw smell of ginger-garlic paste disappears.

• Add a cup of water to the mixture and simmer for 5 minutes.

• Add the cooked toor dal and salt. Cook until the oil separates and chicken pieces are well-cooked.

• Add lemon juice and chopped coriander leaves to the chicken sambhar.

• Remove from heat and serve hot, with steamed rice

• 1 large Onion (thinly sliced)

• 4 medium Tomatoes (quartered)

• 3 cups Pasta (cooked)

• 1 Yellow Capsicum (roasted and cut into strips)

• 2 small Zucchini (blanched and sliced)

• Fresh Basil Leaves to garnish

• 4 tbsp Olive Oil

• 1 1/2 tbsp Red Wine Vinegar

• 1 tsp Dijon Mustard

• 12-15 Black Peppercorns (crushed)

• 1/2 cup Fresh Basil Leaves (torn)

• In a large bowl, take olive oil red, wine vinegar, dijon mustard, castor sugar, black peppercorns and fresh basil leaves and mix well.

• In another bowl, take the pasta and pour the dressing into it and mix well.

• Add the capsicum, zucchini, onion and tomatoes and toss well to mix.

• Keep it aside for thirty minutes.

• Garnish with sprigs of basil and serve.

Tamarind Ginger Pickle is a tasty spicy tangy tamarind pickle with a dash of ginger. Learn how to prepare Tamarind Ginger Pickle by following this easy recipe.

• 1/2 lemon sized ball Tamarind (pulp)
• 6 one-inch pieces Ginger (peeled, washed and cut)
• 10 Green Chillies (chopped)
• 1 tsp Fenugreek Seeds (Methi Dana)
• 1/4 tsp Asafoetida (Hing)
• Salt to taste
• 10 tbsp Sesame Oil (Til Oil)
• 1/4 tsp Turmeric Powder
• 1/2 teaspoon Mustard seeds
• 2 Whole Dry Red Chillies
• 1 tsp Jaggery (Gur)

How to make Tamarind Ginger Pickle:
• In a pan, dry roast the fenugreek seeds till brown. Remove from heat and grind it to a smooth powder.
• Add asafoetida and salt to it and keep aside.
• In a pan, take four tablespoon of oil and lightly sauté the ginger and chillies for about two minutes.
• Add turmeric powder to it and cook for some time. Remove from heat and keep aside.
• In another pan, heat the remaining oil and add mustard seeds and red chillies. When the mustard starts to splutter, add the tamarind pulp and bring it to a boil.
• Now add the powdered fenugreek and jaggery to the tamarind and simmer till the mixture thickens.
• Add the sautéed chilli-ginger to it and cook for a few minutes more, stirring continuously.
• Remove from heat and allow it to cool before storing it away on a sterilized jar

For Paste:

• 1/4 cup Grated Coconut

• 2 Green Chillies

• 2 Garlic clove

• 1 Ginger piece

• 1 Cinnamon

How to make Muttar Mushroom:

• Grind all the ingredients of the paste.

• Heat oil, and saute sliced onion until it turns translucent and golden brown. Add the paste.

• Add in tomato, peas, mushrooms & salt and cook it briefly.

• Add a cup of water and heat on a slow fire.

• Garnish with chopped cilantro on the top & serve hot.

Kerala Crab Curry

• 5 large Crabs (half boiled)

• 3 Green Chilies (finely sliced)

• 1½ tsp Turmeric Powder

• 4 tbsp Roasted Curry Powder

• ½ tsp Chili Powder

• 1 tsp Pepper Powder

• 1 tsp Mustard Powder

• 2 large Onions (Kunjulli) (finely grinded)

• 1 tsp Fenugreek (Uluva)

• 2 pieces Gamboges (Kudam Puli) (finely chopped)

• 1 strand Curry Leaves (finely grinded)

• 5 cups Coconut Milk (thick)

• Lemon Juice (as required)

• 2 ½ cups Water

• Salt to taste

How to make Kerala Crab Curry:

• Cut and clean the crabs and divide each into four parts.

• Over an oil heated pan at medium flame place the crab pieces gently.

• Stir it upside down then add all the spices and cover it for a minute.

• Open the lid then add mustard powder, lemon juice, coconut milk, water and salt each at a time.

• Continuously keep stirring for five minutes.

• Allow it to boil then seal it and lower the flame.

• Simmer it for fifteen minutes till tender and put it aside.

Suggestions: Best serve it with rice and veg-briyani or roti.
